6 English muffins, split
8 ounces lump crabmeat, drained
2 tablespoons lemon juice
2 teaspoons grated lemon zest
2 cups shredded white cheddar cheese
12 large eggs
1 cup half-and-half cream
1 cup 2% milk
1/2 cup mayonnaise
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
2 cups shredded Swiss cheese
1 cup grated Parmesan cheese
4 green onions, chopped
1/4 cup finely chopped sweet red pepper
1/4 cup finely chopped sweet yellow pepper

Steps:

  • Spread mustard over bottom half of muffins. Place in a greased 13x9-in. baking dish. Top with crab, lemon juice and zest. Sprinkle with cheddar cheese. Top with muffin tops; set aside., In a large bowl, whisk eggs, cream, milk, mayonnaise, salt, cayenne and pepper. Pour over muffins; sprinkle with Swiss cheese, Parmesan cheese, onions and peppers. Cover and refrigerate overnight., Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Cover and bake 30 minutes. Uncover; bake until set, 20-25 minutes longer. 12 ounces wide egg noodles, cooked according to package directions and drain well
1/2 onion, chopped
2 -3 garlic cloves, minced
2 celery ribs, chopped
1 tablespoon vegetable oil
18 ounces imitation crabmeat, broken into bite-size pieces
1 (14 1/2 ounce) can asparagus spears, cut, drained
1/4 cup parmesan cheese, grated, divided
1 tablespoon dried parsley
1 -2 teaspoon red pepper flakes
3/4 cup cream (10% cream or Half and Half)
1 -2 tablespoon horseradish cream (your choice, mild or hot)
2 teaspoons salt
1 teaspoon ground pepper

Steps:

  • Preheat oven to 350°.
  • In large dutch oven or saucepot, cook egg noodles according to package directions; drain well. Return drained noodles to saucepot; set aside.
  • In medium skillet, sauté onion, garlic and celery in vegetable oil for 3-4 minutes or until onions are soft; set aside to cool slightly.
  • Add the cooked onion mixture, crabmeat, drained asparagus, half of the parmesan cheese, parsley, and red pepper flakes to the noodle. Mix well; set aside.
  • Whisk together the cream, horseradish cream, salt and pepper. Pour over the crabmeat mixture, and blend well with wooden spoon or large ladle.
  • Pour crab and noodle mixture into a 9x13 baking dish, and sprinkle a light layer of the remaining parmesan cheese on top.
  • Bake at 350° for 30 minutes. Serve hot.

2 1/2 cups cooked pasta (Ruote, Farfalle, Penne, or really any kind of tubular or shaped pasta)
1 (8 ounce) package imitation crabmeat
1 (17 ounce) jar Classico Alfredo with sun dried tomatoes
1 zucchini
1 yellow squash
1/2 cup diced onion
1/2 cup portabella mushroom, diced
1/4 teaspoon red pepper flakes
1 tablespoon dried parsley
2 cups part-skim mozzarella cheese, shredded
2 tablespoons dry breadcrumbs
2 teaspoons butter, melted

Steps:

  • Slice the squashes and dice the mushroom and onion.
  • Combine the Alfredo sauce, pasta, crab, onions, mushrooms, squash, zucchini, parsley and pepper flakes in a large bowl and toss to coat.
  • Transfer mixture to a greased 13x9x2 baking dish and cover with cheese.
  • Cover and bake at 325°F for 35 minutes.
  • Toss bread crumbs and butter and sprinkle over casserole.
  • Bake uncovered an additional 5 to 10 minutes to brown.

1 lb fresh crabmeat, picked over for shells
2 large eggs, well beaten
10 saltine crackers, finely crushed
1/4 cup heavy cream
3/4 teaspoon dry mustard
1/4 teaspoon Old Bay Seasoning
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 (2 ounce) jar chopped pimiento
3 tablespoons butter, melted
1/2 teaspoon Worcestershire sauce
4 tablespoons mayonnaise
6 tablespoons butter, melted
1/2 cup dry breadcrumbs
paprika

  • Preheat oven to 450 degrees.
  • Butter 8 individual custard dishes or ramekins.
  • Set aside crabmeat. Combine next 10 ingredients (through mayonnaise)in medium bowl. Stir until well blended. Fold in crabmeat.

CHEDDAR CHEESE CRAB BAKE

This recipe was altered by me and originated from Todd Wilbur's Top Secret Recipe Book (I have every one of his books). He also has a website (check it out!). I was looking for a copycat recipe for R. Lobster's Cheddar Cheese biscuits and came upon this variation...which I personally like more than the biscuit recipe I was trying to locate. You can make biscuits with this, but I spread the mixture out to be more like a pizza and it saved me time and was more fun to eat. I think these would also make really neat appetizers if you used small spoons of the dough on the baking sheet...but you would have to adjust cooking time. I will be making this recipe over and over because it was so easy and tasted like I fussed all night! You will find my recipe long, but that's because my directions are thorough...the prep time/work time for this recipe is only 10 minutes...though that may be because I make it often!

1/3 cup canned crabmeat, picked over and lightly drained
1 tablespoon melted butter, for biscuit dough, plus
2 tablespoons melted butter, for brushing on dough after baking
2/3 cup milk (can use 1%, 2% of full fat, but not skim)
1/4 teaspoon garlic powder
1/2 teaspoon parsley flakes, ground finely (crush with fingers)
1 3/4 cups finely shredded sharp cheddar cheese (not fat free)
2 cups Bisquick reduced-fat baking mix or 2 cups comparable baking mix

Steps:

  • Wash your hands well (you will be mixing dough with them).
  • Preheat oven to 450.
  • Spray pizza baking sheet or jelly roll/baking sheet with non stick spray in a 8 inch circle in center of sheet.
  • Cut 2 TB of butter off of stick, then 1 TB off of stick.
  • Melt 1 TB of butter in microwave for a few seconds (be careful when you take it out not to burn yourself).
  • In a medium mixing bowl, combine Bisquick or baking mix, 1 cup of the cheddar cheese, milk and 1TB of the melted butter.
  • Mix with your hand until well combined.
  • Dough will form a sticky thick glob and mixture should not be dry or crumbly at all- Scrape excess off of hand and pat into ball- Pick up dough ball and put it into center of your sprayed circle on your baking sheet- Add any dough from bowl that you can scrape up.
  • Spread dough into a pizza shape about 8 inches in diameter, forming a lip around edge like a pizza- To do this, I just started from the center and kept mashing out towards the edges- The lip naturally formed for me this way- If your dough isn't round in shape, then shape it like you would playdough.
  • Wash your hands and dry well.
  • Take parsley flakes and, pinching them between your fingers make sure they are finely ground.
  • After grinding them well, sprinkle them on top of your dough.
  • Sprinkle the crabmeat on top of the parsley flakes.
  • Sprinkle the remaining cheese on top of the crabmeat.
  • Remember not to go all the way to the edge of your"pizza" with your cheese.
  • Bake for approx 15 minutes on center rack or until the cheese browns slightly.
  • While Bread is baking, melt the other 2 TB of Butter and combine with the garlic powder.
  • When bread is finished, take out of oven and immediately brush entire surface with the melted butter/garlic powder.
  • Put back in oven for 1 more minute.
  • Take out of oven and slice into 8 pieces with pizza cutter and serve hot.

1 3/4 cups finely-shredded cheddar cheese
2/3 cup milk
2 tablespoons butter, melted, divided
1/4 teaspoon garlic powder
1/2 teaspoon fine parsley flakes
1/3 cup crabmeat (fresh or canned lump)

Steps:

  • Preheat oven to 450 degrees.
  • Combine baking mix, 1 cup of the cheddar cheese, milk, and 1 half of the melted butter in a medium bowl.
  • Mix by hand until well-combined.
  • Pat out the dough into circle approximately 8 inches in diameter, with a slight lip around the edge, like a pizza crust.
  • Sprinkle the parsley over the top of the dough.
  • Be sure the dried parsley flakes are crushed fine. You can easily crush the flakes in a small bowl with your thumb and forefinger.
  • Sprinkle the crab over the top of the dough.
  • Sprinkle the remaining cheese over the crab.
  • Don't go all of the way to the edge of the dough -- leave a margin of a half-inch or so around the edge.
  • Bake for 14 to 16 minutes or until the cheese on top begins to slightly brown.
  • Combine the remaining butter with the garlic powder and brush it over the top of the bake as soon as it comes out of the oven.
  • Slice it like a pizza into 8 pieces and serve hot.

For the Fish:
4 tablespoons of soy sauce
1/4 cup of fresh squeezed lemon juice
3 cloves of chopped garlic
1 teaspoon dry parsley
1/2 teaspoon crushed red pepper flakes
Pepper to taste.
4 6oz Skinless Salmon Fillets
Crab Topping:
8 ounces of imitation crab meat, coarsely chopped
1/4 cup of sour cream
1/4 cup of mayonnaise
3 cloves of garlic, coarsely chopped
1/4 cup of onions, finely chopped
1/4 cup grated parmesan cheese
1/2 cup of seasoned bread crumbs
Salt and Pepper to taste

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Prepare and spray a baking sheet with cooking spray. For the Fish: In a bowl large enough to hold the salmon fillets, combine the first six ingredients. Next, cut about a 2 inch long slit in the top portion of each salmon fillet. Coat each salmon fillet with the soy mixture and lay it on the baking sheet with the slit facing upwards. Pour any remaining marinade over the salmon. Place the salmon in the refrigerator until you have prepared the crab topping. For the Crab Topping: In a clean bowl combine the first six ingredients. Add approximately 3 tablespoons of the seasoned bread crumbs to the mixture until combined. Add salt and pepper to taste. Remove the salmon fillets from the refrigerator and spoon about 1/4 of the filling into, and above, the slits on the fish. Sprinkle the crab topping with the remaining bread crumbs and bake for approximately 20 minutes until salmon just begins to flake. You do not want to over-bake as the salmon will keep cooking once it is removed from the oven. Serving suggestion: Serve with a side of rice pilaf or garlic mashed potatoes.
