Categories     Shellfish     Sauté     Quick & Easy

Number Of Ingredients 24

1 pound cooked blue crab meat, lump crab, or Dungeness crab meat*
1/4 cup scallions (green part only), minced
1 tablespoon chopped fresh herbs (such as cilantro, dill weed, basil, thyme, parsley, etc.)
1 1/2 teaspoons Old Bay Seasoning
1/4 cup Panko or fine dry bread crumbs*
1/4 cup mayonnaise
salt and pepper, to taste
1 large egg, slightly beaten
1/2 cup fine bread crumbs of cracker crumbs**
4 tablespoons butter
Green Onion Sauce
Green Onion Sauce
1/2 cup mayonnaise
3 tablespoons heavy cream
1 large egg, hard cooked and minced
couple drops tabasco sauce
1/2 teaspoon worcestershire sauce
1 teaspoon freshly squeezed lemon juice
1 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 jalapeno chile pepper, seeded, deveined and very finely chopped
1/8 teaspoon sugar
3 tablespoons green onions, whole, finely chopped

Steps:

  • 1. Carefully clean the crab meat of any shells or cartilage. In a large bowl, gently mix crab meat, scallions or green onions, herbs, Old Bay seasoning, bread crumbs, and mayonnaise. Season with salt and white pepper. Carefully fold in egg with a rubber spatula until mixture just clings together. Divide crab mixture into four portions and shape each into a flat, round cake about 3 inches across and 1-1/2 inches high Place onto a baking sheet lined either parchment or wax paper; cover with plastic wrap and refrigerator at least 3 hours or overnight (the cold will firm up the cakes so that they will not break up when fried.) Place bread or cracker crumbs into a shallow pie plate; lightly dredge crab cakes. In a large nonstick frying pan over medium heat, heat butter until hot but not smoking (add more butter if needed). Gently lay chilled crab cakes onto bottom of the pan; slowly fry crab cakes approximately 3 to 4 minutes per side or until crisp and golden brown, turning once only with a spatula. If the crab cake browns too quickly, reduce heat. The internal temperature should be 150 to 155 degrees F. with an cooking thermometer. Removed from heat, transfer onto a serving platter, and serve hot with Green Onion Sauce. NOTE: These crab cakes are also great as a starter course of your dinner meal. Makes 8 servings or 16 petite crab cakes. 2. Green Onion Sauce: In a medium bowl, combine mayonnaise, cream, egg, Tabasco sauce, Worcestershire sauce, lemon juice, dry mustard, salt, peppr, japapeno chile, sugar, and green onions. Cover and refrigerate at least one hour. Serve cold.

Crab Cakes with Chardonnay Cream Sauce image

Categories     Milk/Cream     Wine     Appetizer     Sauté     Crab     Summer     Bon Appétit     Sugar Conscious     Pescatarian     Peanut Free     Tree Nut Free     Soy Free

Yield Serves 8 as a first-course

Number Of Ingredients 14

1 3/4 cups Chardonnay or other dry white wine
1/3 cup chopped shallots
1 cup whipping cream
1 1/2 pounds crabmeat, drained (about 4 cups)
2 1/2 cups finely crushed potato chips
1 1/4 cups fresh breadcrumbs made from French bread
1 7.25-ounce jar roasted red peppers, drained, coarsely chopped
1/2 cup thinly sliced green onions
2 large eggs
2 tablespoons chopped fresh dill
1 tablespoon Dijon mustard
1 tablespoon whole grain mustard
1 tablespoon mayonnaise
1/4 cup (about) vegetable oil

Steps:

  • Boil wine and shallots in heavy medium saucepan until mixture is reduced to 1/2 cup, about 10 minutes. Add cream and boil until liquid is reduced to sauce consistency, about 10 minutes. Season to taste with salt and pepper.
  • Mix crabmeat, 1/2 cup crushed potato chips, breadcrumbs and next 7 ingredients in large bowl until well blended. Using 1/4 cupful crab mixture for each cake, form mixture into sixteen 2 1/2-inch-diameter cakes. (Can be prepared 6 hours ahead. Cover sauce and crab cakes separately and refrigerate. Rewarm sauce over medium-low heat, stirring occasionally, before serving.) Place remaining potato chips in shallow dish. Press each cake into chips, turning to coat evenly.
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Working in batches, add crab cakes to skillet and cook until golden brown and heated through, adding more oil as necessary, about 5 minutes per side. Transfer crab cakes to paper-towel-lined plate to drain.
  • Place 2 crab cakes on each plate; spoon sauce around crab cakes and then serve immediately.

Tips:

  • Choose Fresh Crab Meat: Use fresh crab meat for the best flavor and texture. If using frozen crab meat, thaw it thoroughly before using.
  • Use a Combination of Crab Meats: For a more complex flavor, use a combination of different types of crab meat, such as blue crab, Dungeness crab, and snow crab.
  • Don't Overmix the Crab Cakes: Overmixing the crab cakes will make them tough. Gently mix the ingredients until they are just combined.
  • Form the Crab Cakes Gently: Use your hands to gently form the crab cakes. Avoid pressing them too tightly, as this will make them dense.
  • Pan-Fry the Crab Cakes Over Medium Heat: Pan-fry the crab cakes over medium heat so that they cook evenly throughout without burning.
  • Serve the Crab Cakes with a Creamy Green Onion Sauce: The creamy green onion sauce adds a delicious and flavorful complement to the crab cakes.

Conclusion:

Crab cakes are a delicious and versatile seafood dish that can be enjoyed as an appetizer, main course, or sandwich. With a few simple tips, you can make crab cakes that are sure to impress your friends and family. Serve them with a creamy green onion sauce for an extra special treat.
