Tips:

  • Choosing the Right Crab Meat: Opt for fresh or frozen lump crab meat for the best texture and flavor. Avoid using canned crab meat as it tends to be mushy and lacks flavor.
  • Preparing the Crab Meat: Before using, gently pick through the crab meat to remove any shells or cartilage. You can also rinse the crab meat briefly under cold water to remove any excess salt.
  • Seasoning the Crab Meat: Don't be afraid to season the crab meat generously. Use a combination of herbs, spices, and citrus to enhance the natural flavor of the crab.
  • Binding the Stuffing: Use a mixture of bread crumbs, celery, onion, and parsley to bind the stuffing together. Ensure that the mixture is moist enough to hold its shape but not too wet that it becomes soggy.
  • Stuffing the Lobster: Carefully stuff the crab meat mixture into the lobster cavities. Be gentle to avoid breaking the lobster shells.
  • Baking the Lobster: Bake the stuffed lobster in a preheated oven until the lobster meat is cooked through and the stuffing is golden brown. The exact cooking time will depend on the size of the lobster.
