I made this for my grandparent's 61st wedding anniversary recently. They lived in Florida in their youth, and loved Joe's Stone, and have lamented on occasion that they will never be able to go back (they now live in Virginia). The family rallied 'round and ordered the crab claws directly from Joe's, got a Joe's Stone Crab Cookbook, and prepared the rest of the meal directly from it. What a fantastic surprise it was... and this was a very sweet end to the night. NOTE: I was only able to find about 8 key limes, which wasn't enough juice. I supplemented with Nellie & Joe's Key Lime juice without a problem. Also, I thought the pie was so rich it didn't even need any whipped cream.

1/3 lb graham cracker (or 1 cup plus 2 1/2 Tablespoons graham cracker crumbs)
5 tablespoons melted unsalted butter
1/3 cup sugar
3 egg yolks
1 1/2 teaspoons grated key lime zest
1 (14 ounce) can sweetened condensed milk
2/3 cup freshly squeezed key lime juice
1 cup heavy whipping cream, chilled
3 tablespoons confectioners' sugar

Steps:

  • For the crust:.
  • Preheat oven to 350°F.
  • Butter a 9-inch pie plate.
  • Break up graham crackers, place in processor and process to crumbs (if you don't have a processor, place crackers in large plastic bag, seal, and crush using a rolling pin).
  • Add melted butter& sugar and pulse until combined.
  • Press mixture into bottom and up sides of pan, forming a neat border around th edges.
  • Bake until crust is set and golden, about 8 minutes.
  • Set aside on wire rack; leave oven on.
  • For the filling:.
  • Meanwhile, in an electric mixer with the wire whisk attachment, beat the egg yolks and lime zest at high speed until very fluffy, about 5 minutes.
  • Gradually add the condensed milk and continue to beat until thick, 3-4 minutes longer.
  • Lower the mixer speed and slowly add lime juice, mixing until just combined.
  • Pour mixture into crust and bake for 10 minutes, or until filling has just set.
  • Cool on wire rack, then refrigerate.
  • Freeze for 15-20 minutes before serving.
  • For the topping:.
  • Whip the cream and the confectioner's sugar until nearly stiff.
  • Cut pie in wedges and serve very cold, topping each wedge with a dollop of whipped cream.

1 pound lump crab meat
4 eggs
2 tablespoon flour
1 cup mayonnaise
1 cup whole milk
8 ounce shredded Swiss cheese
8 ounce shredded Cheddar cheese
2 teaspoons Old Bay seasoning
1 tablespoon finely chopped onion
1 tablespoon finely chopped green pepper
(Note: You can use backfin, it is fine. Lump is the most expensive and not necessary.)

Steps:

  • Preheat oven to 350ºF Bake your crust for 3 minutes. We used Pillsbury pie dough and it worked out great. We did spray the pie pans with Pam spray to keep the crust from sticking. Combine eggs, flour, mayonnaise and milk, mix well. Add cheese, 1 teaspoon Old Bay, onion and pepper and mix well. Fold in crab meat and try not to separate the lumps of crab meat too much. Pour into 2 separate pie crusts, sprinkle with additional Old Bay Seasoning. Bake at 350ºF for 50 minutes or until knife comes out clean. (Check at about 40 minutes to avoid burning, since ovens vary.)

1 pound frozen puff pastry, thawed
1 egg, beaten
1/4 cup grapeseed oil
1 cup diced white onion
1 pound lobster meat, diced
1 cup small diced carrots
1 cup small diced celery
1/2 cup all-purpose flour
4 cups chicken broth
3 cups milk
1 pound jumbo lump crabmeat, cleaned, cartilage removed
1/2 cup frozen English peas, thawed
Salt and freshly ground black pepper
2 tablespoons chopped chives, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Roll out the puff pastry on a floured surface, to about 1/2-inch thickness. Using a round pastry cutter or cookie cutter, about 3 inches in diameter, cut out 6 round disks.
  • Brush each disk with the beaten egg, coating the pastry well. Arrange on a greased baking sheet and bake until the pastry rises and is golden brown, about 15 to 20 minutes. When baked, remove from oven and allow to cool.
  • Add the grapeseed oil to a large heavy-bottomed saucepan over medium heat. Add the onions and saute until soft and translucent (not caramelized), then add the lobster. Saute until the lobster is cooked, about 5 to 8 minutes.
  • At this point, add the carrots and celery and saute a few more minutes until the vegetables are tender.
  • Stir in the flour and cook for about 5 minutes; this is the beginning of the roux. Slowly begin adding the chicken stock, stirring continuously, until the mixture thickens. *Add the milk, slowly and stir until incorporated to the desired thickness.
  • Reduce the heat to a simmer and continue to cook for a further 10 to 12 minutes. Just before serving add the crabmeat and the peas and adjust the seasoning with salt and pepper, to taste. To serve, spoon into small bowls, sprinkle with chopped chives and top with a puff pastry disk.
  • *Cook's Note: By adding the liquid slowly it will help you see the desired thickness of the sauce. You may not need all of the milk, as some flours absorb different amounts of liquid. Just be careful.

3/4 cup sliced large asparagus spears (cut on the bias, 14-inch thick)
One 10-ounce ball white or whole-wheat pizza dough
3/4 cup Cajun Alfredo Sauce, recipe follows
3/4 cup fresh crabmeat, drained and well picked for shells
1/4 cup grated mozzarella cheese
2 tablespoons diced roasted red bell pepper
Freshly cracked black pepper
1/4 cup shaved Parmesan cheese, for garnish
lemon wedges, for garnish (optional)
1 green onion, sliced, for garnish (optional)
Grated zest of 1 lemon
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 tablespoon minced garlic
1/8 teaspoon cayenne pepper
1/8 teaspoon ancho chile powder
Pinch freshly grated nutmeg
1/8 teaspoon freshly cracked black pepper
1/4 teaspoon smoked sweet paprika
3/4 cup heavy cream
1/4 cup grated Parmesan cheese

Steps:

  • 1. Place a pizza stone (if using) in a cold oven and preheat the oven to 500 degrees F.
  • 2. Bring 1 quart of salted water to a boil in a medium saucepan and fill a large bowl with water and ice. Add the asparagus to the boiling water and cook for 1 to 2 minutes, then immediately drain the asparagus and drop them into the ice water to stop the cooking. Drain again when cool.
  • 3. When all the ingredients are ready, roll the dough into a 10.5-inch round. Build the pizza in this order: sauce, crab, mozzarella, asparagus, roasted pepper. Add some freshly cracked pepper.
  • 4. Bake the pizza for 12 to 15 minutes, until golden brown.
  • 5. Shave the Parmesan onto the pizza, slice it, and serve with a squeeze of fresh lemon and green onion, and half of the lemon zest.
  • 1. In a medium skillet over medium-high heat, heat the olive oil. Add the flour and stir constantly for 2 minutes to create a roux. Lower the heat to medium, add the garlic, cayenne, ancho chile, nutmeg, cracked pepper, and paprika and stir for 1 minute. Gradually stir in the cream, whisking constantly until the mixture is thickened, about 10 minutes. Stir in the Parmesan and remove from the heat. Season with salt and pepper to taste.

5 tbsp melted butter
1/3 cup sugar
Filling:
3 egg yolks
2 tsp grated lime zest

2/3 cups of fresh lime juice
Vanilla Whipped Cream Topping:
1 1/2 cups heavy cream
1 tsp vanilla extract
1/4 cup granulated sugar

Steps:

  • Preheat your oven to 350 degrees and then grease the bottom and sides of a 9-inch pie dish with butter. Set aside. Now you're ready to begin prepping your pie crust. Using a food processor, pulse the graham crackers into fine crumbs. Next add in the butter and sugar and pulse again until the ingredients combine. (If you don't have a food processor you can place the graham crackers in a plastic bag and crush with a rolling pin and then combine the remaining ingredients by hand.) Take the crust mixture and firmly press down onto the bottom and sides of your pie dish. (Tip: Use the bottom of your measuring cup like I did to help you press the mixture down smoothly and evenly). Bake in the oven for approximately 8 minutes or until just golden and set. Set aside on a wire rack and be sure to leave the oven on. Next combine the egg yolk and lemon zest and beat on high speed using the wire whisk attachment on your electric mixer until the mixture is fluffy, approximately 5 minutes. Gradually add in the condensed milk and continue to beat for another 3-4 minutes until the mixture is thick. Lower the speed and gradually add in the lime juice until just combined. Next pour the mixture into the crust and bake for about 10 minutes until the filling sets. Cool on a wire rack and then refrigerate until the pie is completely cold, then set in the freezer for about 5-10 minutes before you're ready to serve the pie. While the pie is freezing, combine all of the ingredients for the topping and whip together until the cream is stiff. Spread the whipped cream evenly across the entire pie. Feel free to garnish with sliced lime if you wish then cut into wedges and serve. Be prepared to be blown away by the deliciousness of this pie It's that good.
