3 tablespoons butter
1 lb fresh mushrooms, finely chopped
1 medium green bell pepper, finely chopped
2 scallions, finely chop white part only
1/2 cup sweet sherry
3 tablespoons chopped pimiento
1 1/2 cups half-and-half
salt and pepper
1 1/2 lbs fresh lump crabmeat
1 cup fresh grated parmesan cheese

Steps:

  • Preheat oven to 350°F Butter 6 2-cup ramekins.
  • In a large skillet, melt the butter over moderate heat, add mushrooms, bell pepper, and scallions. Cook, stirring frequently, for 3 minutes. Add the sherry and simmer until reduced by half, about 5 minutes. Add the pimentos and half and half, season with salt and pepper, and bring to an almost full boil. Add the crabmeat, reduce heat to low, and stir until well blended.
  • Scrape into ramekins and sprinkle cheese over tops. Bake until lightly browned, about 15-20 minutes.

1 (6 ounce) can crab meat, drained
5 ounces sharp processed cheese spread
¼ cup butter, softened
2 tablespoons mayonnaise
1 pinch garlic salt
2 tablespoons chopped fresh parsley
6 English muffins, split in half

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium-size mixing bowl, combine crabmeat, cheese spread, butter or margarine, mayonnaise, garlic salt, and parsley. Mix well, and spread on English muffins. Cut the muffins into quarters and arrange them on a cookie sheet.
  • Bake at 400 degrees F (200 degrees C) for 15 minutes. Broil the muffins for the last minute to get them toasted.

½ cup mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
½ teaspoon Old Bay Seasoning TM
½ teaspoon salt
½ teaspoon cayenne pepper
½ teaspoon dry mustard
1 egg, beaten
¼ cup fresh bread crumbs
1 teaspoon paprika
3 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, combine crab meat, mayonnaise, lemon juice, Worcestershire sauce, Old Bay Seasoning, salt, cayenne pepper, dry mustard, and beaten egg.. Mix thoroughly.
  • In an 8" pie dish, spread mixture and lightly coat the entire dish with bread crumbs. Then sprinkle the top with paprika. Dot the dish with the butter.
  • Bake in a preheated oven for 20 minutes.
