2-1/2 cups fresh or frozen sweetened raspberries, thawed
2 cups fresh or frozen cranberries, thawed
1 cup chopped peeled apple
2-1/2 cups honey
1-1/2 cups sugar
1 pouch (3 ounces) liquid fruit pectin

Steps:

  • Pulse raspberries, cranberries and apple in batches in a food processor until almost smooth. Transfer to a Dutch oven., Stir in honey and sugar. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Continue to boil 1 minute, stirring constantly. Remove from heat; skim off foam., Ladle hot mixture into 6 hot half-pint jars, leaving 1/4 in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. 1 pound fresh raspberries
1 ½ cups white sugar
2 tablespoons lemon juice

Steps:

  • Combine raspberries, sugar, and lemon juice in a saucepan and mix well. Cover and refrigerate overnight.
  • Inspect 3 jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.

3 to 4 tablespoons ice water
1 tablespoon cider vinegar
2 cups all-purpose flour
3/4 teaspoon salt
1/2 cup butter-flavored shortening
1/4 cup lard
1-1/4 cups plus 2 tablespoons sugar, divided
5 tablespoons quick-cooking tapioca
3 cups fresh or frozen cranberries, halved
2-1/2 cups fresh or frozen unsweetened raspberries, thawed
1/3 cup honey
1 teaspoon almond extract
1/2 teaspoon ground cinnamon
Dairy-free vanilla ice cream, optional

2 tablespoons confectioners' sugar
10 tablespoons butter, softened
