4 lbs. of pork spareribs
For the Marinade
1/2 cup cranberry juice
1/2 cup orange juice
1/4 cup ketchup
1/4 cup soy sauce
1/4 cup water
1/4 cup vinegar (any kind)
1 tsp. ground cumin
1 tsp. ground curry
1 tsp. salt
1 tsp. garlic powder
1 tsp. black pepper

Steps:

  • Combine all of the ingredients for the marinade in a bowl and stir. Place ribs in the marinade and refrigerate for at least one hour or more or up to overnight. Preheat oven to 325 degrees F. Place the ribs in a roasting pan with the marinade. Bake uncovered for 2 - 2 ½ hours or until the ribs are fall off the bone tender. Allow the marinade to evaporate in the cooking process. Let the ribs cool slightly; then separate the ribs with a cooking scissor and plate.

1/2 cup dried cranberries
1 1/4 cups water
1 cup fresh orange juice
1 tablespoon unsalted butter
1 (8-ounce) package long-grain and wild rice (recommended: Uncle Ben's)
1 orange, zested
1/2 cup sliced almonds

  • Put cranberries in a medium bowl and pour in enough hot tap water to cover. Set aside while you make the rice.
  • In a medium pot over medium-high heat, add the water, orange juice, and butter, and bring to a boil. Stir in the rice, and the included contents of the seasoning packet, and return to a boil. Turn the heat to low, cover, and cook until the rice is tender, about 20 to 25 minutes. Drain the cranberries and add them to the rice along with the orange zest, and almonds. 4 tablespoons chili powder
4 tablespoons Hungarian paprika
2 tablespoons dry mustard

4 large racks, 4 pounds or more, Kansas City cut spare ribs, hard bone removed
3 cups orange juice
1/2 cup honey
1 (12-ounce) can cranberry sauce
3 cups barbecue sauce

Steps:

  • A few hours before beginning the slow cooking of the ribs, make the dry rub by combining garlic powder, onion powder, chili powder, paprika, dry mustard, and salt in a bowl and mixing well. Rub the seasoning mix into the meat and let sit for a few hours. The mixture will melt into the meat.
  • About 30 minutes before beginning to barbecue, heat the grill.
