BROCCOLI & CRANBERRY SALAD

Broccoli & Cranberry Salad image

I found some recipes that were close, but I couldn't find the *exact* recipe that I usually make (ever since I hounded it out of a co-worker after a potluck years ago, even before I had any desire or ability to cook much at all). This salad is always good with almost anything, except maybe pancakes... nah, even then I bet the bacon would make it would be good ;) The whole Craisins thing make this a natural for the holidays that involve some form of cranberries. That said, it's great in the summer, too.

CRANBERRY AND CITRUS BROCCOLI SALAD

Cranberry and Citrus Broccoli Salad image

Found the original of this recipe in the December 2008 Betty Crocker Most Requested RECIPES: Holiday Recipe Collection, although it has been slightly tweaked by someone who really likes cranberries! NOTE: If you aren't a fan of the cranberry, pomegranates make a nice substitute

Provided by Sydney Mike

Categories     Fruit

Time 15m

Yield 5 serving(s)

Number Of Ingredients 10

1/2 cup mayonnaise
1/4 cup orange juice
1 teaspoon granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
3 cups broccoli florets, fresh, coarsely chopped
1 large navel orange, peeled, cut into bite-size pieces
1 cup dried cranberries
1/3 cup sunflower seeds, roasted, salted
2 tablespoons red onions, sliced

Steps:

  • In a large serving bowl, mix the mayonnaise, orange juice, sugar, salt & pepper.
  • Add the remaining ingredients, then toss until well-coated.
  • Store covered in the refrigerator.

Tips:

  • For the best flavor, use fresh, crisp vegetables. If your cabbage or broccoli is starting to wilt, it will not taste as good in the salad.
  • Shred the cabbage and broccoli finely so that they are easy to eat. You can use a food processor or a sharp knife to do this.
  • Be sure to drain the cranberries well before adding them to the salad. Otherwise, the salad will be too watery.
  • If you don't have any chopped nuts on hand, you can substitute sunflower seeds or pumpkin seeds.
  • Feel free to add other ingredients to the salad, such as cooked chicken, bacon, or hard-boiled eggs.

Conclusion:

Cranberry Broccoli Cabbage Salad is a delicious and healthy side dish that is perfect for any occasion. It is packed with vitamins, minerals, and antioxidants, and it is also a good source of fiber. The salad is easy to make and can be prepared in advance, making it a great option for busy weeknights.
