Meet the Cook: When mealtime rolls around, my husband and our two teenagers are never sure what's in store - lots of my cooking is "trial and error", and I love trying out new things. Luckily, my family doesn't mind being my guinea pigs! This recipe, however, actually originated with one of the boys. It was published in his Sunday school paper about 10 years ago. First-time tasters comment on how light it is...and say they can't believe it's made with cranberries. -Heather Clement, Indian River, Ontario

Categories     Food & Cooking     Dessert & Treats Recipes

Time 2h40m

Yield Makes about 1 1/2 pints

Number Of Ingredients 5

1 1/2 pints fresh blueberries (about 3 cups)
1 cup sugar
1 cup buttermilk
Finely grated zest of 1 lemon
1/2 teaspoon pure vanilla extract

Steps:

  • Puree blueberries and sugar in a blender until smooth. Pour through a fine sieve set over a bowl; discard solids. Stir in buttermilk, lemon zest, and vanilla.
  • Chill a loaf pan in freezer at least 10 minutes. Freeze and churn blueberry mixture in an ice cream maker according to manufacturer's directions, then transfer to pan. Cover with plastic wrap and freeze until hardened, at least 2 hours; sherbet can be frozen up to 2 weeks ahead.

Tips:

  • Use fresh cranberries. Fresh cranberries have a tart and tangy flavor that is perfect for sherbet. If you can't find fresh cranberries, you can use frozen cranberries, but thaw them before using.
  • Make sure the buttermilk is cold. Cold buttermilk will help the sherbet freeze more quickly and smoothly.
  • Don't overbeat the sherbet. Overbeating the sherbet will make it grainy.
  • Chill the sherbet for at least 4 hours before serving. This will allow the sherbet to firm up and develop its full flavor.
  • Serve the sherbet with your favorite toppings. Some popular toppings for cranberry buttermilk sherbet include fresh berries, whipped cream, and chopped nuts.

Conclusion:

Cranberry buttermilk sherbet is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. So next time you are looking for a sweet and tangy dessert, give cranberry buttermilk sherbet a try.
