I made this for holiday gifts and to have on hand for a healthier holiday snack, it is a nice way to lighten up granola using egg whites. I found the recipe in a recent 11/07 Bon Appetit Magazine and was pleasantly surprised to see the kids eating it by the handful:)

CRANBERRY-WALNUT GRANOLA

Cranberry-Walnut Granola image

Based on a recipe from The Wholesome Junk Food Cookbook by Laura Trice. She says of this recipe, "I grew up eating homemade granola that my mom made for us and have found that having a tart fruit in the granola gives it extra pizzazz. I enjoy the cranberry-walnut combination. Walnuts have healthy oils and are so good for us. The protein and fat combination of the nut helps to make the granola more filling, providing lasting energy. Granola takes a little while to bake and makes your entire house smell good. This is a good granola for breakfast." NOTE: Add fruit to granola only after the baking is done to avoid drying out the fruit and avoid making it tough to chew and less flavorful.

Time 40m

Yield 6 cups, 12 serving(s)

Number Of Ingredients 11

cooking spray or butter, for greasing pan
4 cups rolled oats
1 cup walnuts, coarsely chopped
1/2 cup sesame seeds
2 teaspoons orange zest, finely grated
1/4 cup evaporated cane juice, crystals
2 teaspoons sea salt, unprocessed
2/3 cup honey or 2/3 cup maple syrup
1/2 cup oil, expeller-pressed
1/2 cup dried cranberries
1/2 cup dried blueberries (optional)

Steps:

  • Preheat oven to 325°F Prepare a shallow 14x11-inch pan by greasing with cooking spray or butter.
  • In large bowl, thoroughly mix together oats, walnuts, sesame seeds, orange zest, sugar, and salt.
  • In a separate bowl combine the honey and oil. Pour over the dry ingredients. Thoroughly mix together and spoon into the prepared pan.
  • Bake for 30 minutes, turning the pan and stirring every 10 minutes, or until golden brown.
  • Remove from oven. Mix in the dried cranberries and blueberries, if using, and allow to cool.

Tips:

  • Use a variety of oats. This will give your granola a more complex flavor and texture. You can use old-fashioned oats, quick-cooking oats, or a combination of both.
  • Toast your oats before baking. This will help to bring out their flavor and make them more crispy.
  • Don't be afraid to experiment with different nuts and seeds. Walnuts, pecans, almonds, sunflower seeds, and chia seeds are all great additions to granola.
  • Use pure maple syrup. This will give your granola a more natural flavor than pancake syrup.
  • Let your granola cool completely before storing it. This will help to prevent it from becoming too soft or chewy.
  • Store your granola in an airtight container at room temperature. It will keep for up to 2 weeks.

Conclusion:

Cranberry maple walnut granola is a delicious and healthy breakfast or snack. It's easy to make and can be customized to your liking. With a little planning, you can have a batch of fresh granola ready to enjoy in no time.
