3 eggs
2 c shredded zuchinni
1 c vegetable oil (I like to use 1/2 coconut oil, melted, 1/2 veg. oil)
1 can(s) crushed pineapple, drained, 8 oz
2 tsp vanilla extract
3 c all-purpose flour
1 3/4 c sugar
2 tsp baking soda
1 1/2 tsp cinnamon
1 tsp salt
1/2 tsp baking powder
1 c chopped nuts (I like to use macadamia or pecan)
1/2 c dried cranberries
1/2 c coconut (opt)

Steps:

  • 1. Preheat oven to 350 degrees. In a large bowl, combine eggs, zucchini, oil, pineapple, and the vanilla extract.
  • 2. In a separate bowl, combine the dry ingredients.
  • 3. Add the dry ingredients to the wet ingredients in large bowl.
  • 4. Fold in nuts, cranberries, and coconut if desired.
  • 5. Pour into 2 greased 8x4" loaf pans or 3 small loaf pans.
  • 6. Bake larger pans for approximately 50-55 mins and smaller pans for 35-40 mins or until golden brown and an inserted toothpick comes out clean. Cool for 10 mins before removing bread from pans onto wire racks.

2 tablespoons vegetable oil
2 tablespoons honey
1 ⅛ cups water
2 ½ cups bread flour
½ cup whole wheat flour
½ teaspoon ground cinnamon
½ teaspoon ground mace
1 tablespoon dry milk powder
1 ¼ teaspoons salt
1 cup dried cranberries
2 dried pineapple rings, finely chopped
2 teaspoons active dry yeast

Steps:

  • Combine the bread flour, whole wheat flour, ground cinnamon, mace, powdered milk, salt, cranberries, and pineapple. Add this mixture as you would normally add dry ingredients to your bread machine.
  • Add all the ingredients to the pan of the bread machine in the order suggested by the manufacturer.
  • Set your bread machine to Basic Loaf, and check to see that the dough forms a ball without excess moisture. May have to add a little more bread flour, no more than a tablespoon, so that the dough forms a nice solid ball.

1 cup canola oil
2 cups granulated sugar
1 (12 oz) bag of cranberries
1 (8 oz) can crushed pineapple (drained)
3 cups flour
2 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees; coat two 9-inch loaf pans with non-stick cooking spray. Pulse cranberries in food processor to chop; set aside. Sift together flour, baking soda, baking powder, salt, cinnamon, ginger and nutmeg together and set aside. With an electric mixer, beat eggs, oil, sugar and vanilla for 3 minutes at medium speed. Stir in chopped cranberries and crushed pineapple. Add dry ingredients to wet ingredients; stir together just enough to combine mixtures - do not over mix. Divide mixture evenly into both pans; Bake for 1 hour and 10 minutes, or until a knife inserted into the middle comes out clean. Notes and Suggestions: Try adding golden raisins to the batter for an extra sweet taste.

1/2 c margarine or butter
1/2 c granulated sugar
1/2 c dark brown sugar,packed
2 large eggs
1 c whole cranberry relish
1/2 c crushed pineapple, well drained
1/3 c eggnog
3 Tbsp honey butter, optional-
2 1/2 c all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
3/4 c chopped pecans, other nuts optional

Steps:

  • 1. Heat oven to 350^. Spray 2 8x5-inch loaf pans and place a piece of waxed paper at the bottom of the pans and spray lightly. Set aside.
  • 2. Using an electric mixer with a large bowl, cream margarine and sugars until well blended. Add eggs, cranberry relish , pineapple, vanilla and honey butter. Blend well.
  • 3. Combine and blend flour, and remaining dry ingredients in a bowl. Add flour mixture alternately with the eggnog, beginning and ending with dry ingredients. Blend well after each addition. Stir in nuts. Pour batter evenly into the 2 prepared loaf pans. Bake for about 50 minutes.Test for doneness with a toothpick.
  • 4. Remove from oven and loosen around ends and sides. Turn out onto oven mitt and remove waxed paper from bottom of bread..place on wire rack to cook completely. Frost with powdered sugar frosting and decorate top with 10 whole pecan on top.This is optional.
