3/4 cup ground pecans
2 tablespoons sugar
7 tablespoons butter, melted
CRANBERRY LAYER:
4-1/2 cups fresh or frozen cranberries
1 cup sugar
3 tablespoons cornstarch
3 tablespoons water
4 teaspoons grated orange zest
FILLING:
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
3/4 cup packed brown sugar
1 can (15 ounces) pumpkin
3 teaspoons vanilla extract
1 teaspoon ground cinnamon
4 large eggs, lightly beaten
Whipped cream, additional ground cinnamon and shaved chocolate optional

Steps:

  • Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan. 1 tablespoon sugar
6 tablespoons unsalted butter, melted, plus more for the pan
For the filling:
1 pound whole-milk ricotta cheese (preferably fresh)1 1/2 cups sugar
1 15-ounce can pure pumpkin puree
3 large eggs
3/4 cup mascarpone cheese
1 tablespoon pure vanilla extract
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
For the topping:
1 3/4 cups fresh cranberries
1/2 cup sugar
1 tablespoon fresh lemon juice
Pinch of salt

Steps:

  • Preheat the oven to 325 degrees F. Wrap the outside (bottom and side) of a 9-inch springform pan with foil. Make the crust: Pulse the cookies and sugar in a food processor until finely ground. Add the melted butter; pulse to combine. Press into the bottom and about 1/4 inch up the side of the pan. Brush the side of the pan lightly with melted butter. 1/2 cup/115 grams unsalted butter (1 stick), melted
1 1/2 pounds/680 grams cream cheese, at room temperature
1 cup/200 grams granulated sugar
1/2 cup/110 grams light brown sugar
6 large eggs
1 tablespoon vanilla extract
1 1/2 teaspoons pumpkin pie spice
1 (15-ounce/425-gram) can pumpkin purée (not pumpkin pie filling)

Steps:

  • 1. Heat the oven to 375 degrees. Lightly grease a 9-by-13-inch pan and line with parchment paper, leaving a 2-inch overhang on two sides.
