THE BEST CRANBERRY SALAD!

The BEST Cranberry Salad! image

This is just FABULOUS! Mainly for holidays, or special occasions. I got the recipe from my sister-in-law. She has a couple of recipes that she makes every year at holidays, and this is one of them. She gave it to me, and now, I make it for the other side of the family, and for friends. It's Great!

Provided by H. Cato

Categories     Dessert

Time 25m

Yield 1 bowl, 20 serving(s)

Number Of Ingredients 6

1 (12 ounce) package fresh cranberries (minced fine)
2 cups sugar
1 (8 ounce) can crushed pineapple, juice and all (the small cans, like a tuna can)
1/2 cup black walnut
0.5 (16 ounce) package mini marshmallows
1 pint heavy whipping cream

Steps:

  • Mince cranberries with a hand-blender, food-processor, or some kind of chopper.
  • I use my Braun hand-blender, and the little cup it came with, which is used to chop things really small (rather than pureeing them, which the blender would probably do, if I used it without the cup).
  • But you only fill it a 1/4 to a 1/2 full each time, or they won't be minced properly.
  • (cranberries may be prepared up to 3 days in advance) In a bowl, mix the first four ingredients, and refrigerate for at least one hour, best if overnight.
  • In the morning, or shortly before serving, whip the whipping cream until it peaks.
  • Set aside.
  • Add the marshmallows to the cranberry mixture, until thoroughly incorporated into the mix.
  • Then slowly fold in the whipped cream, until it's completely mixed.
  • Refrigerate until serving.

CRANBERRY SALAD

Cranberry Salad image

This pretty-in-pink salad becomes light and mousse-like when refrigerated overnight. Delicious as a refreshing side for a potluck picnic or served with roasted ham or turkey during the holidays, this easy recipe can easily be doubled to serve a large crowd.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 12h15m

Number Of Ingredients 9

3 cups fresh or thawed frozen cranberries (about 12 ounces)
1 orange, cut into 1-inch pieces (2 cups)
2 tablespoons packed fresh mint leaves
3/4 cup sugar
Coarse salt
2 cups heavy cream, plus more for serving
1 cup plain yogurt
1/2 cup pecans, toasted and coarsely chopped
Pomegranate seeds, for serving (optional)

Steps:

  • Combine cranberries, orange, mint, 1/2 cup sugar, and 1/4 teaspoon salt in a food processor. Pulse just until chopped but not watery, 12 to 15 times.
  • Whisk cream with remaining 1/4 cup sugar in a large bowl to stiff peaks. Add yogurt and continue whisking until stiff peaks form again. Gently fold in cranberry mixture and pecans, just until combined and no streaks of white remain.
  • Transfer to a 2-quart serving dish or individual serving dishes. Cover and refrigerate at least 12 hours and up to 1 day. Serve chilled, dolloped with whipped cream, and, if desired, sprinkled with pomegranate seeds.

Tips:

  • Choose fresh cranberries: Fresh cranberries are plump and red, with no signs of bruising or shriveling. Avoid cranberries that are soft or have a dull color.
  • Prepare the cranberries properly: Before using, rinse the cranberries thoroughly under cold water. If you are using frozen cranberries, thaw them overnight in the refrigerator or at room temperature for about an hour.
  • Use a sharp knife to chop the cranberries: This will help to prevent the cranberries from becoming mushy.
  • Chill the salad before serving: This will help to firm up the salad and make it more refreshing.
  • Serve the salad within a few hours of making it: Cranberry salad is best when it is fresh. If you need to store it, cover it tightly and refrigerate it for up to 2 days.

Conclusion:

Cranberry salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its bright red color and tart flavor, cranberry salad is sure to be a hit at your next gathering.
