CRANBERRY (NUT) SURPRISE

CRANBERRY (NUT) SURPRISE image

Categories     Cake     Dessert     Bake     Thanksgiving     Quick & Easy

Yield 16 pieces

Number Of Ingredients 7

1/2 cup melted margarine (1 stick)
1 cup flour
2 cups fresh whole cranberries
1 1/2 teaspoon almond extract
2 eggs
1 cup sugar (or less)
OPTIONAL: 1 cup of nuts (walnuts, almonds, pecans, pistachios...your favorite)

Steps:

  • Melt margarine, let it cool. Pre-heat oven to 375 degrees. Combine sugar and flour. Mix with eggs. Add melted margarine. Stir. Add remaining ingredients. Pour into well-greased 9x9 inch glass baking pan. Bake at 375 degrees for 50 minutes. Remove from oven. Cool. Cut into small squares

Tips:

  • Use fresh cranberries. Fresh cranberries have a tart and juicy flavor that is perfect for this recipe. If you can't find fresh cranberries, you can use frozen cranberries, but thaw them completely before using.
  • Don't overcook the cranberries. Cranberries should be cooked until they are tender but still hold their shape. Overcooking will make them mushy.
  • Use a variety of nuts. This recipe calls for pecans and walnuts, but you can use any type of nuts that you like. Some other good options include almonds, hazelnuts, and pistachios.
  • Don't skimp on the butter. Butter adds richness and flavor to this recipe. If you use too little butter, the cranberries will be dry and bland.
  • Serve warm or cold. This recipe can be served warm or cold. If you serve it warm, the cranberries will be softer and the nuts will be more fragrant. If you serve it cold, the cranberries will be more tart and the nuts will be more crunchy.

Conclusion:

Cranberry Surprise is a delicious and easy-to-make dessert that is perfect for any occasion. The tartness of the cranberries is perfectly balanced by the sweetness of the sugar and the richness of the butter. The nuts add a nice crunch and texture. This recipe is sure to be a hit with your family and friends.
