2 cups all-purpose flour (spooned and leveled), plus more for pan
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 large egg
1 teaspoon grated orange zest
1 cup fresh orange juice
1 cup fresh cranberries
1 cup toasted walnuts, coarsely chopped

Steps:

  • Preheat oven to 325 degrees. Butter and flour an 8 1/2-by-4 1/2-inch loaf pan; set aside. In a medium bowl, stir together flour, baking powder, baking soda, and salt; set aside.

Time 2h45m

Number Of Ingredients 9

5 teaspoons instant yeast
2 1/2 cups plus 2 tablespoons room temperature water
6 3/4 cups bread flour
2 teaspoons salt
3 tablespoons sugar
2 tablespoons butter (melted)
2 cups walnuts (coarsely chopped)
1 1/2 cups dried cranberries
Cornmeal (for dusting baking sheets)

Steps:

  • In a large mixing bowl or the bowl of a stand mixer with a dough hook attachment, combine the instant yeast and water. Let stand for 5 to 10 minutes.
  • Add the flour, salt, sugar, and melted butter. Mix until the dough comes together, then knead for about 10 minutes by hand on a lightly floured surface or with the dough hook of the stand mixer. If needed, add more flour, in small amounts, to keep the dough from sticking to the bowl or your hands.
  • Add the walnuts and cranberries and knead them in until they are distributed throughout the dough. This is best done by hand unless you feel your mixer can handle the task.
  • Oil a large bowl. Transfer the dough to the bowl and roll over to coat all sides. Cover with plastic wrap and let it rise until doubled, about 1 hour.
  • Line 2 baking sheets with parchment paper. Sprinkle lightly with cornmeal.
  • Punch down and transfer the dough to a lightly floured surface. Divide into 2 portions and form each into tight rounds. Place on the prepared baking sheets. Cover the loaves with a lightweight kitchen towel and let rest for 45 minutes.
  • Meanwhile, preheat the oven to 350 F. Position the oven rack in the center of the oven.
  • Bake the loaves for 30 to 40 minutes, until they are nicely browned and sound hollow when tapped on the bottoms. The internal temperature will be around 195 F when done.

Number Of Ingredients 11

¾ cup butter, room temperature
3 cups white sugar
3 eggs, room temperature
3 tablespoons orange zest
6 cups all-purpose flour
1 tablespoon salt
4 ½ teaspoons baking powder
1 ½ teaspoons baking soda
2 ¼ cups orange juice
3 cups whole cranberries
1 ½ cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease three 8x4-inch loaf pans. Line bottoms with parchment paper, if desired.

  • Sift together the flour, salt, baking powder and baking soda. Add to the egg mixture, alternating with orange juice.
  • Coarsely chop the cranberries.
  • Pour the flour mixture into the mixing bowl alternately with the orange juice, mixing until just incorporated. Fold in the chopped cranberries and walnuts, mixing just enough to evenly combine. Divide the batter evenly among prepared pans.

Tips:

  • Choose the right bread: For best results, use a firm and crusty bread that can hold up to the toasting process. Some good options include sourdough, French bread, or Italian bread.
  • Use fresh cranberries: Fresh cranberries are essential for achieving the best flavor in this recipe. If you can't find fresh cranberries, you can use frozen cranberries, but be sure to thaw them completely before using.
  • Toast the walnuts: Toasting the walnuts will bring out their flavor and make them more crunchy. You can toast them in a toaster oven or in a skillet over medium heat.
  • Use a good quality butter: The butter you use will make a big difference in the flavor of the toast. Use a high-quality butter that has a rich, creamy flavor.
  • Don't overcrowd the pan: When toasting the bread, don't overcrowd the pan. This will prevent the bread from toasting evenly.

Conclusion:

Cranberry walnut toasting bread is a delicious and easy-to-make breakfast or snack. It's perfect for a special occasion or for a simple weeknight meal. With a few simple ingredients and a little bit of time, you can enjoy this classic dish in no time.
