"CRANCRACK" CRANBERRY SALAD



This was my mothers recipe, and named by my son because it is so addictive. By replacing the Jell-O® with sugar-free Jello-O®, using no-sugar-added pineapple, and your choice of sugar substitute, this turns into a reduced-carb recipe. If you don't have a grinder, use a blender and water to grind the cranberries, then drain.

1 (12 ounce) package fresh cranberries
1 large orange, peeled
2 cups boiling water
1 cup white sugar
1 (6 ounce) package cherry-flavored gelatin mix (such as Jell-O®)
1 (14 ounce) can crushed pineapple with juice

Steps:

  • Process cranberries and orange in a food processor until finely ground.
  • Stir boiling water, sugar, and gelatin together in a bowl until gelatin and sugar dissolve. Add cranberry mixture and pineapple with juice; stir. Pour into a 8-inch square serving dish, cover the dish with plastic wrap, and refrigerate until set, about 45 minutes.

One 10-ounce bag fresh whole cranberries (about 3 cups)
3/4 cup sugar
2 cups miniature marshmallows
One 20-ounce can crushed pineapple, drained
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup pomegranate seeds

Steps:

  • Pulse the cranberries in a food processor until fine and no large pieces remain. Transfer to a large mixing bowl and stir in the sugar. Cover and refrigerate for at least 2 hours or up to overnight.
  • Drain any accumulated juices from the cranberries and reserve for another use, and then stir in the marshmallows and drained pineapple and set aside.
  • Whip the heavy cream in a large mixing bowl until it begins to thicken, about 1 minute, and then beat in the powdered sugar and vanilla until soft peaks form, 3 to 5 minutes. Fold the whipped cream into the cranberry mixture, one third at a time, until fully incorporated. Transfer to an 8-by-8-inch baking dish.
  • Refrigerate or freeze for about 2 hours. Right before serving, garnish with the pomegranate seeds.

1/4 teaspoon celery seed
1 tablespoon reduced-fat mayonnaise

Juice of 1/2 lemon
1 tablespoon cider vinegar
1 cup finely shredded red cabbage
1/2 green apple, peeled, cored and finely chopped
2 tablespoons dried cranberries
8 large leaves endive

  • Heat a small cast-iron skillet over medium heat. Toast pecans and celery seed, stirring constantly, until fragrant, 1 to 2 minutes. Combine mayonnaise, yogurt, honey, juice and vinegar in a bowl; season with salt and pepper. Add pecans, celery seed, cabbage, apple and cranberries; toss well to coat. We made this every year when I was growing up. I couldn't wait for it to mellow for a few hours; I would just dig in right away. My daughter says she has frozen this with good results. It makes a big batch.

6 small apples
1 whole orange
3/4 cup sugar

Steps:

  • Wash and pick through cranberries.
  • Core and quarter apples.
  • Seed and quarter orange.
  • Grind in food processor starting with the orange, and then add apples and cranberries. You can do in batches so you don't over process it.
  • We used a hand crank grinder to make this when I was a child.
  • Add sugar (in the 50's we used 2 cups of sugar, so taste after a couple hours and adjust per your personal preferences).
  • Let marinate for at least 6 hours or overnight.

This recipes was orginally my DH's Grandmothers and has been tweaked by my MIL. I didn't care for cranberry salad ever till I tried this. I have been making this for years now. Its more of a Jello than a salad. Great to get kids to eat something different. It's definitely something I look forward to eating every Thanksgiving and Christmas. Great on biscuits and rolls. I make this in a large glass decorative bowl because it doesn't look good if you try to transfer it to another dish for the meals. ** Note this is best if made the night before to give time for proper set. I have a lower sugar version posted also. Suggested serving size is about 3 tablespoons.

1 (12 ounce) bag cranberries, sorted, rinsed and drained
2 small oranges, peeled
1 1/2 cups sugar
1 (3 ounce) box jello raspberry gelatin powder
1 (3 ounce) box jello cherry gelatin (black cherry works well too)
1 1/2 cups boiling water
12 ice cubes
