CRAWFISH AND SHRIMP POT WITH SPICED SWEET POTATOES

Crawfish and Shrimp Pot With Spiced Sweet Potatoes image

Plentiful throughout the Gulf Coast, crawfish and shrimp are Choctaw staples and traditional seasonings like filé, the spice ground from dried sassafras bark, and spicy chiles are a perfect accompaniment. Here, the crustaceans rest on a bed of spicy sweet potatoes, in a dish that calls back to traditional feasts and community gatherings. The sassafras adds a grassy, slightly sour note, and the berries bring more color and tang. You can vary the shellfish depending on the season and your locale in this festive dish, which is easily doubled to serve a crowd.

Time 45m

Yield 4 servings

Number Of Ingredients 11

1 tablespoon red-pepper flakes, plus more as needed
1 tablespoon coarse sea salt, plus more as needed
2 pounds crawfish
1 pound head-on jumbo shrimp
2 tablespoons sunflower oil
1 cup chopped yellow onion
1 small orange or purple sweet potato, unpeeled, cut into 1/2-inch cubes
2 tablespoons New Mexico red chile powder or chipotle chile powder
1 tablespoon filé powder
1/2 cup fresh or thawed frozen blackberries
1/2 packed cup sliced dandelion greens (or other dark greens such as arugula or spinach), plus whole leaves reserved for garnish

Steps:

  • Add the red-pepper flakes, salt and 3 quarts water to a large pot. Bring to a boil over high heat. Add the crawfish and shrimp, return to a boil, then lower the heat and simmer until the shellfish is deep red, about 10 minutes, skimming off any foam that rises to the surface. Turn off the heat, cover and let stand for 10 minutes.
  • Meanwhile, prepare the vegetables: In a large skillet, heat the oil over medium-high. Add the onion and sauté until it begins to soften, about 3 minutes. Add the sweet potato, chile powder, filé powder and 2 cups of the shellfish cooking water and bring to a boil. Reduce the heat to medium and simmer until the sweet potatoes are tender, stirring occasionally, 8 to 10 minutes. Stir in the blackberries and sliced greens and cook for 1 to 2 minutes. Using the back of a fork or the tip of a wooden spoon, mash the blackberries gently and season the mixture to taste with coarse sea salt and red-pepper flakes.
  • Spoon the vegetables onto individual plates or a large platter. Strain the crawfish and shrimp mixture, then arrange the cooked shellfish on top of the vegetables. Garnish with the reserved leaves.

DEEP-SOUTH SHRIMP AND CRAWFISH STEW

Categories     main-dish

Time 1h5m

Yield 6 servings

Number Of Ingredients 26

2 teaspoons paprika
2 teaspoons dried thyme, ground to a powder with a mortar and pestle
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon dried basil, ground to a powder with a mortar and pestle
1 teaspoon chili powder
1 pound crawfish, rinsed well in several changes of cold water and eviscerated
1 pound (31 to 40 size) shrimp, deveined
1 large clove garlic, lightly crushed with the side of a knife blade and minced
4 to 6 scallions, white and tender green parts only
1 bay leaf
1/4 teaspoon ground nutmeg, optional
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 cup milk
1/2 cup grated Cheddar
1/2 cup grated Gruyere
White pepper
Salt, if needed
1/2 cup panko bread crumbs
1 tablespoon finely chopped fresh parsley leaves (from about 3 large sprigs)
2 tablespoons grated Parmesan
2 tablespoons grated Cheddar
1 teaspoon Irvine Spices Cajun Seasoning
2 teaspoons prepared horseradish
4 hard boiled eggs, peeled while still warm, and chopped

Steps:

  • Bring 4 cups of water to a boil in a medium saucepan.
  • To a 1-gallon plastic bag add paprika, ground thyme, salt, ground black pepper, basil, and chili powder, and shake to combine. Add the crawfish and shrimp to the bag in batches and shake to coat. Add the crawfish and shrimp a little at a time to the boiling water so as not to stop the boil, and let cook until pink and the crawfish is curled. As they are cooked, use a slotted spoon to remove the crawfish and shrimp to a platter and set aside until they are cool enough to handle. Remove the shells from the crawfish and shrimp and add the shells back to the pot of cooking liquid, and allow to reduce by two-thirds. (The shells of crawfish are removed by cracking the tail with both hands and forcing it back out through the curve of the tail.) Reserve the crawfish and shrimp meat until needed. When reduced, strain the cooking liquid into a bowl.
  • For the sauce:
  • In another saucepan, combine the garlic, scallions, bay leaf, nutmeg, if using, and butter over medium heat. Add flour to make a roux and allow it to cook until blond, then begin whisking in the milk. Into the bowl of reduced seafood cooking liquid, whisk the Cheddar and Gruyere cheeses. Add this to the milk mixture and simmer for 15 minutes, stirring frequently. Remove saucepan from heat, season sauce, to taste, with white pepper, and salt if needed. Remove and discard bay leaf. Immediately put a sheet of plastic wrap on top of the sauce to prevent a skin from forming.
  • Preheat oven to 350 degrees F.
  • Make a topping by adding bread crumbs, parsley leaves, Parmesan, Cheddar, Cajun seasoning, horseradish, and hard boiled eggs to a small bowl and combining with a wooden spoon.
  • Fold the crawfish and shrimp into the sauce a little at a time so you can control the amount of sauce to the amount of seafood. (Do not feel compelled to use all of the sauce.) Spread the mixture into a 3 quart casserole dish. Sprinkle with the topping and heat about 5 minutes in the oven until the topping is browned. Serve family style, garnished with parsley sprigs.

CAJUN CRAWFISH AND SHRIMP ÉTOUFFéE

Cajun Crawfish and Shrimp Étouffée image

An authentic Louisiana recipe with a rich and spicy fresh tomato-based roux with fresh garlic, bell peppers, celery and onions mixed with crawfish and shrimp. A little time consuming but well worth it! Serve over steamed rice with hushpuppies and/or crackers on the side.

Provided by RHONDA35

Categories     Etouffee

Time 1h10m

Yield 6

Number Of Ingredients 14

⅓ cup vegetable oil
¼ cup all-purpose flour
1 small green bell pepper, diced
1 medium onion, chopped
2 cloves garlic, minced
2 stalks celery, diced
2 medium fresh tomatoes, chopped
2 tablespoons Louisiana-style hot sauce
⅓ teaspoon ground cayenne pepper
2 tablespoons seafood seasoning
½ teaspoon ground black pepper
1 cup fish stock
1 pound crawfish tails
1 pound medium shrimp, peeled and deveined

Steps:

  • Heat the oil in a heavy skillet over medium heat. Gradually stir in flour, and stir constantly until the mixture turns 'peanut butter' brown or darker, at least 15 or 20 minutes. I use a large fork with the flat side to the bottom of the pan in a side to side motion. This is your base sauce or 'roux'. It is very important to stir this constantly. If by chance the roux burns, discard and start over.
  • Once the roux is browned, add the onions, garlic, celery and bell pepper to the skillet, and saute for about 5 minutes to soften. Stir in the chopped tomatoes and fish stock, and season with the seafood seasoning. Reduce heat to low, and simmer for about 20 minutes, stirring occasionally.
  • Season the sauce with hot pepper sauce and cayenne pepper (if using), and add the crawfish and shrimp. Cook for about 10 minutes, or until the shrimp are opaque.

RICH & CREAMY CRAWFISH OR SHRIMP PASTA W/ CHEESE SAUCE

Rich & Creamy Crawfish or Shrimp Pasta W/ Cheese Sauce image

An excellent pasta recipe from New Orleans. I first made it in my home ec. class in high school and it has ever since become a family favorite. So flavorful, yet not spicy like so many New Orleans seafood dishes. This is a simple and exquisite recipe. Total time to prepare is about 30 minutes. Some ingredients can be substituted. Please see below.

Provided by Jenn from New Orlea

Categories     One Dish Meal

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

1 (12 ounce) package frozen cooked crawfish, thawed (The crawfish can be substituted with 1 lb of shrimp, just make sure it is fully cooked)
1 (10 3/4 ounce) can cream of mushroom soup (Any cream soup will work, I prefer Campbell's cream of mushroom.)
green onion (chopped)
1/2 cup butter or 1/2 cup margarine
1 (6 ounce) package kraft garlic cheese rolls (looks like a sausage link, sometimes hard to find, can use garlic powder and Velveeta or similar)
salt
1 (1 lb) package angel hair pasta or 1 (1 lb) package other pastas
1/2-1 cup milk (optional)

Steps:

  • Chop the green onions (as much as you like--I usually just use a handful).
  • Open the cheese and slice it in as many pieces as possible so it can melt easily.
  • Set onions and cheese aside separately.
  • It is a good idea at this point to start a large pot of boiling water, and it should be boiling by the time the sauce is done.
  • To make the sauce: Melt stick of butter in a large skillet on medium heat.
  • Add chopped onions.
  • Simmer for a few minutes, stirring occasionally, until onions look nicely cooked.
  • Add the package of crawfish and let simmer for another few minutes.
  • Add the cheese, and once it has started to melt, add the can of soup.
  • Dash of salt if desired.
  • You can turn the heat up to medium hi.
  • Continue stirring until the cheese is completely melted.
  • If it is too thick, milk can be added to thin it out.
  • Cover and turn heat back down to low.
  • Stir occasionally so the sauce does not stick.
  • Now just boil the pasta according to the package instructions.
  • Sauce can be served over the pasta or mixed inches.
  • If there are leftovers, I usually store it all mixed together.
  • It reheats better that way.

Number Of Ingredients 19

1/2 cup Hoisin sauce
3 tablespoons rice vinegar
2 tablespoons sambal oelek or chili paste
1 teaspoon sesame oil
1/2-inch fresh ginger, grated, plus 1-inch fresh ginger, minced
1 tablespoon pineapple juice
1/4 cup soy sauce
1 tablespoon honey
1 tablespoon lime juice
1 pound shrimp, shells removed, de-veined
1 tablespoon sesame oil
1 serrano pepper, seeded and minced
1 garlic clove, minced
1-pound sweet potatoes, peeled and spiralized
2 radishes, sliced thin
10 mini sweet peppers, quartered
1/3 cup sweet chili sauce
1/4 cup peanuts, roughly chopped
fresh cilantro, roughly chopped, to garnish

Steps:

  • To make the sauce, combine the Hoisin sauce, rice vinegar, sambal oelek or chili paste, sesame oil, 1/2-inch grated ginger, pineapple juice, soy sauce, lime juice, and honey, and mix well. Add the shrimp and set aside to sit for 20 minutes while you prep everything else. In a large skillet heat the sesame oil over medium-high heat. Once shimmering, add the serrano, ginger, and garlic. Sauté for 1 to 2 minutes. Add the peppers and radishes, and sauté for 5 to 8 minutes, until softened. Toss in the sweet potato noodles. Add the sauce that the shrimp is marinating in, but hold the shrimp for now, and stir in the sweet chili sauce. Reduce heat to medium, cover, and cook for about five minutes, tossing once until the sweet potato noodles begin to soften. Add in the shrimp and cook for 3 to 5 minutes longer until the shrimp is pink and cooked through. Serve and top with chopped peanuts and fresh cilantro.

SWEET-POTATO TIAN WITH SPICED SHRIMP AND PROSCIUTTO

Sweet-Potato Tian With Spiced Shrimp and Prosciutto image

Provided by Molly O'Neill

Categories     dinner, casseroles, project, main course

Time 1h35m

Yield Six servings

Number Of Ingredients 14

1/4 cup plus 1 tablespoon olive oil
4 pounds sweet potatoes (about 6 medium), peeled and cut into 1/8-inch-thick slices
3 1/2 teaspoons kosher salt
Freshly ground pepper to taste
3 medium red onions, peeled and thinly sliced
1 1/2 cups white wine
1/4 cup Sherry
1/4 cup fresh lemon juice
1 teaspoon crushed pepper flakes
1/4 teaspoon cayenne pepper
2 1/2 pounds jumbo shrimp, shelled and deveined
1/2 pound thinly sliced prosciutto, trimmed of excess fat, cut across into thirds
1 cup coarse fresh bread crumbs
1 tablespoon chopped Italian parsley

Steps:

  • Preheat the oven to 350 degrees. Brush 1 tablespoon of olive oil over the bottom of a 12-by-3 1/2-inch round clay casserole dish. Layer 1/3 of the sweet potatoes in the dish, overlapping the slices slightly. Season with 3/4 teaspoon of salt and pepper. Scatter 1/3 of the onions over the sweet potatoes.
  • Repeat with the remaining sweet potatoes and onions, seasoning each layer of potatoes with 3/4 teaspoon of salt and pepper. Combine the wine and Sherry and pour over the top. Cover with aluminum foil and bake until the potatoes are tender, about 1 hour.
  • Meanwhile, in a bowl, combine the lemon juice, 1/4 cup of olive oil, 1/2 teaspoons of salt, pepper, pepper flakes and cayenne. Add the shrimp and toss to coat. Refrigerate until ready to use.
  • Scatter the prosciutto strips over the sweet-potato mixture. Top with the shrimp. Bake, uncovered, until the shrimp is just cooked through, about 16 minutes. Combine the bread crumbs with the parsley, 1/2 teaspoon of salt and pepper. Sprinkle the crumbs over the shrimp and place under the broiler until lightly browned, about 2 minutes. Serve immediately.

Tips:

  • Choose fresh, high-quality seafood: Look for crawfish and shrimp that are firm and have a slightly briny smell. Avoid any seafood that is slimy or has an off odor.
  • Prepare your seafood properly: Before cooking, devein the shrimp and remove the heads and tails of the crawfish. You can also peel the crawfish if desired.
  • Use a large pot: This recipe makes a lot of food, so you'll need a large pot to cook it in. A 12-quart pot is a good size.
  • Don't overcrowd the pot: If you overcrowd the pot, the seafood won't cook evenly and it will be difficult to stir. Cook the seafood in batches if necessary.
  • Use a flavorful broth: The broth is what gives this dish its flavor, so make sure to use a flavorful one. You can use a store-bought seafood broth or make your own using chicken broth, vegetables, and herbs.
  • Add the vegetables last: The vegetables will cook quickly, so add them to the pot last. This will prevent them from getting overcooked.
  • Serve immediately: This dish is best served immediately, while the seafood is still hot and juicy.

Conclusion:

This crawfish and shrimp pot with spiced sweet potatoes is a delicious and easy-to-make seafood feast. It's perfect for a party or a special occasion. The combination of the flavorful broth, the tender seafood, and the sweet potatoes is sure to please everyone at the table.
