4 cups cooked chicken
1/2 cup mayonnaise
1/2 cup nonfat plain yogurt
1/2 teaspoon salt
1 teaspoon paprika
1 1/2 cups dried cranberries
1 cup celery, chopped
1 tablespoon onion, minced
1/2 cup green bell pepper, minced (optional)
1 cup walnuts, chopped
black pepper
1/8 teaspoon garlic powder (optional)

Steps:

  • Cube the chicken and set aside.
  • In a medium bowl, mix together mayonnaise, yogurt, salt, and paprika.
  • Blend in dried cranberries, celery, onion, bell pepper (if using), and nuts.
  • Add cubed chicken, and mix well.

2-1/2 pounds small red potatoes, cut into 1-inch pieces
3 teaspoons salt
1 pound bacon strips, finely chopped
1 large onion, chopped
3 celery ribs, finely chopped
2 cups mayonnaise
2 tablespoons Dijon or yellow mustard
3/4 teaspoon dill weed
1/2 teaspoon celery salt
1/4 teaspoon celery seed

Steps:

  • Place potatoes in a 6-qt. stockpot; add water to cover. Add salt; bring to a boil. Reduce heat; cook, uncovered, until potatoes are tender, 12-15 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon and drain on paper towels; reserve 4 tablespoons bacon drippings. Cook and stir onion in reserved drippings until browned, 6-8 minutes., Reserve 1/4 cup cooked bacon for topping. Add onion, drippings, celery and remaining bacon to potatoes., In a small bowl, mix mayonnaise, mustard and seasonings. Pour over potato mixture; toss to coat. Refrigerate, covered, until chilled, about 1 hour. Just before serving, sprinkle with reserved bacon.

1 cup chicken stock
1 3-inch piece ginger, peeled
2 medium cloves garlic, peeled and minced
2 teaspoons salt
2 tablespoons sugar
1 small dried red pepper, crushed, or 1/2 teaspoon hot-red-pepper flakes
3 tablespoons soy sauce
juice of 1/2 lemon
2 scallions, thinly sliced
1/4 cup chopped pickled red ginger slices, plus 2 tablespoons of their syrup (available in Asian groceries)
2 tablespoons toasted sesame seeds
4 tablespoons sesame oil
3 cups vegetable oil
6 fresh egg roll wrappers, cut into 2- inch ribbons
1 1/2 ounces rice vermicelli
1 cup cooked shredded chicken
1/2 head iceberg lettuce, cored and cut into thin strips
1 bunch fresh coriander, coarsely chopped
1 cup mung-bean sprouts
7 medium scallions, coarsely chopped
1 cup sesame seeds, toasted and cooled
1 1/2 cups shaved almonds, lightly toasted and cooled
2 tablespoons of pickled red ginger syrup (available in Asian groceries)

Steps:

  • To make the dressing, heat the stock in a small saucepan. Move stock to a blender, then briefly puree a 2-inch piece of the ginger with the stock. Strain and discard the ginger.
  • Mince the remaining ginger and the garlic and add to the strained broth along with the remaining dressing ingredients and whisk to combine. Let the dressing sit for an hour.
  • To make the salad, heat the oil to 400 degrees in a deep frying pan. The oil will dimple slightly but should not smoke. Add half of the wrappers and fry, turning until golden. Drain on paper towels. Allow the oil to return to 400 degrees and repeat with remaining wrappers. Heat the oil again to 400 degrees and fry the vermicelli. The noodles will puff up and turn opaque in 5 to 10 seconds. Turn and let the other side puff up. Remove from oil and drain. Once cool, break the vermicelli into pieces about 3 inches long.
  • In a large bowl, combine the chicken, lettuce, cilantro, sprouts and scallions. Toss well. Add the dressing and toss again. Let sit for 5 minutes. Add the remaining ingredients, toss and serve.

This is the tuna salad I have been making for months and months and my boyfriend says I've perfected it... I agree... try it. We usually just eat it on toasted wheat bread but recently discovered it is great on tostadas! I do not like onions so I cut them up and he puts them on his but if you like them just toss them in!

3 eggs, boiled

Sometimes I substitute Romaine for Butter Lettuce, thats fantastic.

1 romaine lettuce
1 egg (whisked)
3 -4 tablespoons Hellmann's mayonnaise
1 teaspoon red wine vinegar
3 garlic cloves (minced)
3 tablespoons parmesan cheese
1 teaspoon Dijon mustard
4 bacon, slices (cooked)
1 teaspoon lemon juice
pepper
5 dashes Worcestershire sauce
2 tablespoons olive oil

Steps:

  • mix all together, including bacon, and set in the fridge for atleast 30 minutes to let the flavours combine.
  • Cut and clean salad, and mix all. Serve with croutons. You can then shred more parmesan cheese on top if you like.
  • To make croutons cut up a baguette of your choice into cubes, drizzle with olive oil, oregano, basil. salt and pepper and put in oven at 375 for about 6-8 minutes depending on your oven. Bon Apettit!

I tweaked a recipe I found over at allrecipes.com (Chicken Caesar Pasta, posted bsteimle) - streamlined it for harried nights I just don't feel like standing over the stove, and added in more veggies. Some of the vegetable amounts will be approximates, as I just usually eyeball what I throw in. You can add more or less, as you please.

16 ounces uncooked rotini pasta (any kind of corkscrew pasta is fine)
1 (6 ounce) package mixed salad greens (please see note at the end of the recipe)
2 cups cooked chicken, cubed
1 (8 ounce) bottle caesar salad dressing
1/4 cup red wine vinegar
1/2 cup grated parmesan cheese
1 cup cherry tomatoes
1 cucumber, chopped
1 carrot, shredded
1 (2 ounce) can sliced ripe olives, drained

Steps:

  • Start off by getting a large mixing bowl. In the bowl, mix together the Caesar dressing and red wine vinegar. Once that's well combined, stir in the Parmesan cheese. Place the bowl in the refrigerator until needed later.
  • Bring a large pot of water to a boil. Boil pasta until al dente, usually 8-10 minutes. (Check your pasta package for recommended times.).
