My hairdresser shared this recipe with me. I love it served over egg noodles, but my mom prefers it over rice. Either way, it's super yummy! I often use chicken tenders in this recipe, but my hairdresser uses skinless, boneless thighs.

3 lbs boneless skinless chicken breasts or 3 lbs boneless skinless chicken thighs
1 3/4 ounces Italian salad dressing mix
4 tablespoons of melted butter
1 (16 ounce) carton whole mushrooms
1 small onion, chopped
2 garlic cloves, chopped
1 (10 3/4 ounce) can Healthy Request cream of chicken soup
8 ounces cream cheese
1/2 cup chicken broth

Steps:

  • Put chicken in crockpot and sprinkle with dressing mix and 2 tablespoons of melted butter.
  • Cook on low 4-6 hours.
  • Lightly brush off the dirt from the mushrooms with a damp paper towel, and slice off the tough ends.
  • Place mushrooms in the crockpot with the chicken and cover.
  • Melt 2 tbs of butter in sauce pan; saute onion and garlic until onions are clear.
  • Add soup, cream cheese, and broth.
  • Stir until smooth.
  • Add to crockpot, stir together to combine ingredients.
  • Cover and cook on low for another hour.

Here is another one of my favorite crockpot dishes. Friends and family request this recipe and nearly everyone asks for the recipe. It smells so good while cooking! NOTE: If you don't have time to wait for the sauce to thicken, try making it in a sauce pan.

4 chicken breasts (boneless)
2 Tbsp butter (melted)
pepper to taste
1 pkg italian seasoning mix (dry, 1 packet)
1 c heavy cream
1 Tbsp chicken bouillon granules
1 pkg cream cheese (8 ounces)
1/2 c chicken broth
1 large onion
1-2 clove garlic (crushed)

Steps:

  • 1. Brush chicken with 1 Tablespoon butter and place in crockpot. Sprinkle with dry Italian seasoning mix.
  • 2. Cover and cook on low for 6-7 hours.
  • 3. About 45 minutes before done, remove chicken and reserve about 1/2 cup juices in the bottom before return chicken to crockpot.
  • 4. Brown the onion in remaining butter in a saucepan and then add the cream cheese, cream and chicken broth.Add crushed garlic and stir all ingredients until smooth. Salt and pepper to taste.
  • 5. Pour sauce mixture over chicken in crockpot and cook an additional 30-45 minutes. (Alternatively, you can thicken sauce in the saucepan by adding 1 Tbsp water with 1 Tbsp cornstarch and stir until thickened, then pour over chicken.)
  • 6. Remove chicken to platter and pour sauce on top. Serve by itself or over pasta.
