Steps:
- Cut blocks of cream cheese into cubes and put in small crock pot.
- Pour can of rotel (do not drain) over cream cheese.
- Set crock pot to low and heat through. Stir often, it will burn. Once the cream cheese is really soft stir well. I use a whisk or hand blender to get the ingredients to combine better. You don't want it to be lumpy.
- This dip will stay in the crockpot for just a couple of hours before it will start to burn and just turn gross. Make sure you turn the crockpot off after about 2 hours.
- Serve with Tortilla Chips! Enjoy! :).
CREAM CHEESE ROTEL DIP
This recipe was brought to my grandmothers for our Christmas Eve dinner as an appetizer. The bowl was cleaned and everyone wanted the recipe. It's quick and easy and offers a twist on the original velveeta rotel dip. Dip with tortilla chips or fritos. You will love this dip!!!

Steps:
- Brown sausage in large frying pan, drain and return to pan.
- Add 3 packages of cream cheese to the sausage.
- Drain about half of the liquid off the rotel tomatoes (actually pouring the rotels into a strainer will drain off too much of the liquid, just drain with lid on can).
- Add the rotel tomatoes to the cream cheese and saugage and melt all ingredients together until well blended.
- Can be served in a crock pot to stay hot.
Tips:
- For a creamy dip, use a high-quality cream cheese. Philadelphia or another brand of cream cheese that is not low-fat or non-fat is recommended. - Use Rotel tomatoes with green chilies for a bit of spice. You can also use mild Rotel tomatoes if you prefer a milder dip. - Add some chopped onion, cilantro, or jalapeƱos for extra flavor. - Serve the dip with tortilla chips, crackers, or vegetables. - For a party appetizer, make the dip ahead of time and refrigerate it for at least 30 minutes before serving. Conclusion:
Cream cheese Rotel tomatoes dip is an easy and delicious appetizer that is perfect for any occasion. It is creamy, cheesy, and has a bit of a kick. With just a few simple ingredients, you can have this dip ready in no time. So next time you are looking for a tasty snack or appetizer, give this recipe a try. Your taste buds will thank you!
