CREAMY HOMEMADE TOMATO SOUP RECIPE

Creamy Homemade Tomato Soup Recipe image

I finally found the perfect homemade tomato soup. Creamy but not overly so. Tomato-y but not acidic. It is comforting and perfect, with a surprising secret ingredient.

Provided by Jennifer Pallian BSc, RD

Categories     Soup

Time 20m

Number Of Ingredients 8

4 tbsp butter
1/2 cup diced onion
2 tbsp all-purpose flour
2 cups milk (preferably whole)
1/4 tsp baking soda
3 1/2 cups diced tomatoes (include the juice if using canned; if using fresh and you have a good blender, no need to peel them)
2 tsp granulated sugar
salt (to taste (I use about 2 tsp kosher salt, but it really depends if the butter and tomatoes had salt))

Steps:

  • Heat the butter in a large pot over medium heat. Add onion and cook until softened and translucent (not browned), about 6 minutes. Stir in flour, cook one minute, then gradually whisk in milk. Add baking soda, tomatoes and sugar. Simmer 10 minutes, then blend (either with an immersion blender, or in small batches in a regular blender - careful, hot liquids will explode out if you overfill!). Add salt by pinches, tasting as you go until soup tastes vibrant and well-seasoned.

CREAMLESS CREAMY TOMATO SOUP(COOK'S ILLUSTRATED)

Creamless Creamy Tomato Soup(Cook's Illustrated) image

If half of the soup fills your blender by more than two-thirds, process the soup in three batches. You can also use an immersion blender to process the soup directly in the pot. For an even smoother soup, pass the pureed mixture through a fine-mesh strainer before stirring in the chicken broth in step 2.

Categories     Vegetable

Time 15m

Yield 1 pot, 6-8 serving(s)

Number Of Ingredients 12

1/4 cup extra virgin olive oil, plus extra for drizzling
1 medium onion, chopped (about 1 cup)
3 medium garlic cloves, minced-pressed
1 pinch hot red pepper flakes
1 bay leaf
2 (28 ounce) cans whole tomatoes with juice
1 tablespoon brown sugar
3 large slice good-quality white bread, crusts removed, torn into 1-inch pieces
2 cups chicken broth or 2 cups vegetable broth
2 tablespoons brandy (optional)
salt and pepper
1/4 cup fresh chives, chopped

Steps:

  • Heat 2 tablespoons oil in Dutch oven over medium-high heat until shimmering. Add onion, garlic, red pepper flakes, and bay leaf. Cook, stirring frequently, until onion is translucent, 3 to 5 minutes.
  • Stir in tomatoes and their juice. Using a potato masher, mash until no pieces bigger than 2 inches remain. Stir in sugar and bread; bring soup to a boil. Reduce heat to medium and cook, stirring occasionally, until bread is completely saturated and starts to break down, about 5 minutes. Remove bay leaf and discard.
  • Transfer half of soup to a blender, add 1tablespoon olive oil and process until soup is smooth and creamy, 2 to 3 minutes. Be extra careful when putting hot liquids in the blender. Never fill past 2/3 of the way full, and put a dish towel over the top just in case to protect your hands from getting burned by any hot liquid splashing up. Transfer to a large bowl and repeat with remaining soup and oil.
  • Rinse out Dutch oven and return soup to pot. Stir in chicken broth and brandy. Return soup to a boil and season to taste with salt and pepper.
  • Sprinkle each portion with pepper and chives and drizzle with olive oil. Serve (of course) with grilled cheese sandwiches.

Tips:

  • Use ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your soup. Choose ripe, in-season tomatoes that are bursting with flavor.
  • Roast your tomatoes: Roasting your tomatoes before adding them to the soup will caramelize their natural sugars and intensify their flavor.
  • Use a good quality broth: The broth is the base of your soup, so it's important to use a good quality broth. Look for a broth that is low in sodium and has a rich, flavorful taste.
  • Don't overcook the soup: Overcooked soup will lose its flavor and texture. Simmer the soup just until the vegetables are tender and the flavors have melded together.
  • Serve with a dollop of crème fraîche or sour cream: A dollop of crème fraîche or sour cream will add a creamy richness to your soup and help to balance out the acidity of the tomatoes.

Conclusion:

Cream of tomato soup is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With its rich, creamy texture and tangy flavor, cream of tomato soup is a perfect meal for a cold day. Whether you serve it with a grilled cheese sandwich, a salad, or simply a piece of crusty bread, cream of tomato soup is sure to be a hit.
