CREAMED BEEF FOR SOS
A Recipe that is always requested from my kids when they come and visit. I spent 20 years of my 28 years in the Air Force in the dining hall. I think I have perfected SOS (Creamed Beef).Very simple and quick. Serve over toast (Shingles) or biscuits or hashed brown potatoes. I know leaving the grease in is not real healthy but it really makes it tasty. If you use anything other then HAMBURGER or drain the grease it will not turn out.

- Heat oil in heavy large saucepan over medium-high heat. Add shallots and mushrooms; sauté until tender, about 12 minutes. Sprinkle sugar over; sauté until mixture is deep brown, about 4 minutes longer. Add vinegar; stir until liquid evaporates, about 1 minute. Add wine; boil until reduced by half, about 20 minutes. Add both broths, thyme, peppercorns, and bay leaf; bring to boil. Reduce heat to medium; simmer uncovered 35 minutes to blend flavors, stirring occasionally.
- Strain sauce through fine strainer into small saucepan; discard solids. Mix butter and flour in small bowl. Bring sauce to simmer over medium-high heat; gradually whisk in flour mixture. " THE" CREAMED DRIED BEEF/CHIPPED BEEF RECIPE
This is a long-time favorite recipe of our Lancaster County, PA family passed down from my mom. She gets requests for it all the time and has to make double or triple this amount now whenever she makes it so everyone has some to take along home too. For me, it's a true comfort food if there ever was one! We always serve it over toast and/or homefried potatoes. My dad refer's to it as S.O.S. from his days in the service. (Recipe makes about 4 servings for our hungry family but it freezes very well so any leftovers won't go to waste.)

CREAMED CHIPPED DRIED BEEF ON TOAST OR WAFFLES
I've had this recipe for years given to me by my mother. I have to at least triple this when I make it. The recipe says 4 servings, but we like a lot on our toast. We love it for breakfast with fried eggs. Yummy! I also add ground black pepper to mine, but that's just how I like it. Cook and prep times are approximate.

Steps:
- 1. This casserole my grandma made for me when I was a little girl. Peel 4 lg potatotes, dice and boil till till fork tender but not soft or they will mash up in the casserole. dice and fry onion, add ground beef, fry till no longer pink, add 2 cans creamed style corn. I let this simmer while the potatoes are boiling. Add the drained potatoes. Being from Wisconsin, I sprinkle my serving with grated cheddar cheese. It's also really yummy with French's fried onion rings sprinkled on top.
CREAMED GROUND BEEF SOS
I loved it when Mom used to make this for us! I have no idea if she originally made it for Dad, who had been in the army, or if she just liked it because it tasted good and was a budget stretcher. A traditional favorite, good ol' SOS. Note: the title of this recipe specifies that it is made ground beef, rather than chipped beef; "authentic" SOS is generally made with chipped beef, however many folks also refer to the ground beef version by the same name.

- melt butter in same pan add flour to make a paste add milk and stir until smooth.
- heat slowly until thickens stirring often.

Tips:
- Choose the Right Cut of Beef: Chuck roast, top round, and short ribs are excellent choices for creamed beef. These cuts are tough but become tender when braised in a slow cooker.
- Brown the Beef: Browning the beef before braising adds flavor and color to the dish. You can brown the beef in a skillet over medium-high heat or in the slow cooker on the sauté setting.
- Use a Good Quality Broth: The broth is an essential component of creamed beef, so use a high-quality broth that you enjoy the taste of. You can use beef broth, chicken broth, or vegetable broth.
- Add Vegetables: Vegetables add flavor, texture, and nutrients to creamed beef. Some common vegetables to add include carrots, celery, onions, and mushrooms.
- Thicken the Sauce: The sauce in creamed beef should be thick and creamy. You can thicken the sauce using a roux, cornstarch, or flour. If you're using a roux, melt butter in a skillet over medium heat, then whisk in flour until a paste forms. Slowly whisk the roux into the braising liquid until the sauce has reached the desired consistency.
- Serve with Mashed Potatoes or Rice: Creamed beef is traditionally served with mashed potatoes or rice. The creamy sauce pairs well with the fluffy texture of mashed potatoes or the soft texture of rice.
Conclusion:
Creamed beef is a delicious and comforting dish perfect for a weeknight meal. It's easy to make and can be tailored to your taste preferences. With these tips, you can make the best creamed beef that your family and friends will love. So next time you're looking for a hearty and satisfying meal, give creamed beef a try!
