1/2 cup minced fresh gingerroot
1/2 cup Worcestershire sauce
1/4 cup cider vinegar
1/4 cup dry red wine or beef broth
2 garlic cloves, minced
1 beef flank steak (1-1/4 pounds), cut into 1/2-inch strips
1 package (3 ounces) thinly sliced prosciutto, cut into 1/2-inch strips
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
SAUCE:
2/3 cup cream cheese, softened
1/4 cup heavy whipping cream
2 tablespoons lemon juice
2 tablespoons minced fresh basil
2 tablespoons minced fresh tarragon
1 tablespoon minced fresh parsley

Steps:

  • In a bowl or shallow dish, combine the first 5 ingredients. Add beef and turn to coat. Refrigerate at least 4 hours., Drain beef, discarding marinade. Layer 1 slice steak and 1 slice prosciutto; roll up. Repeat with remaining slices of meat., Thread onto metal or soaked wooden skewers. Brush with oil; sprinkle with salt and pepper. 6 ounces rigatoni or other spiral pasta
1 large clove garlic, peeled
3/4 cup low-fat cottage cheese
1 ounce Gorgonzola
1 1/4 cups lightly packed fresh basil leaves
5 ounces ripe tomato, cut in large chunks
Freshly ground black pepper to taste
2 tablespons pine nuts (optional)

Steps:

  • Bring 3 quarts of water to boil and cook rigatoni according to package directions.
  • Meanwhile, chop garlic in food processor. Add cottage cheese, Gorgonzola and basil, and process until smooth. Add tomato and process into tiny chunks. Stir in pepper and, if you like, the pine nuts.

This is a very rich dish. I made it the other night for the family and we loved it. It is a little like alfredo sauce over fried chicken. That's the best description I can give you. Don't eat this if you don't/can't eat lots of fat. It is completely out of this world though. I hope those of you brave enough to try it enjoy it as much as I do.

1 lb chicken, cut into 2 inch pieces
3/8 cup butter
1 1/2 cups flour
2 eggs
8 ounces angel hair pasta, cooked
2 cups cream or 2 cups half-and-half
1 -2 tablespoon dried basil, use double if using fresh
1/3 cup parmesan cheese, freshly grated is best

Steps:

  • Preheat your skillet on medium low, dip chicken pieces in egg and then dredge with flour.
  • After all chicken has been floured, add butter to the pan, allow to butter to melt adjusting heat as necessary to keep butter from burning.
  • Add all the chicken to the pan and allow to cook on medium for approximately five minutes.
  • Then flip to cook the other side.
  • After chicken has been cooked, remove from pan and add cream, basil, and 1 tablespoon of flour.
  • Turn heat down to low and stir to make sure the pan drippings are well distributed throughout the pan.
  • Cook until slightly thickened.
  • In a large serving bowl, place freshly cooked pasta, then add the chicken, when sauce is finished pour it evenly over entire dish.
  • Grate approximately 1/3 cup of parmesan cheese over the dish.
  • Serve hot.

Steps:

  • In a large skillet, melt butter over medium high heat until sizzling. Stir in salt and pepper.
