2 tablespoons all-purpose flour
2 tablespoons butter
¼ teaspoon salt
1 dash ground black pepper
1 medium head cabbage, shredded
1 cup grated Romano cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium heat, blend milk, flour, butter, salt and pepper. Stir constantly until a thick white sauce has formed.
  • In a separate medium saucepan over boiling water, steam cabbage until tender but firm.
  • In a small baking dish, alternate layers of sauce, cabbage and Romano cheese.
  • Bake approximately 30 minutes, until sauce and cheese are bubbly.

4 cups shredded cabbage
4 bacon strips
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika

Steps:

  • In a large saucepan, bring 1 in. of water and cabbage to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender; drain., In a skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoons drippings. Stir the flour, salt, paprika and pepper into the drippings until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Place cabbage in an ungreased 1-qt. baking dish. Top with sauce. Sprinkle bread crumbs and bacon over the top. Bake at 400° for 15 minutes or until heated through.

1 lb cabbage or 1 lb kale
1 lb potato, peeled and diced (about 4 potatoes)
2 small onions or 6 green onions with tops, chopped
1/2 cup cream or 1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon mace

Steps:

  • Strip outer leaves from cabbage.
  • Shred cabbage (or kale), place in a saucepan with water to cover the bottom and bring to a boil.
  • Reduce heat and simmer until crisp-tender, about 5-10 minutes.
  • Drain well.
  • (opt.) Liquefy in blender.
  • Boil potatoes in a separate kettle, covered with water, until tender.
  • In a small saucepan cook leeks or onions and cream(or milk) about 10 minutes.
  • Mash potatoes then season with salt, pepper and mace.
  • Mix in the onions and milk.
  • Combine the potato mixture with cabbage or kale, beating it to a pale green fluff over low heat.
  • Pour into a deep warmed dish.
  • Dab with butter or margarine.
  • NOTE: Leftovers can be fried in oil until crisp and brown on both sides.
  • OPTION: Substitute ground nutmeg for mace.

2 Tbsp butter
1/2 c chopped yellow onion
1/2 c chopped celery
1 tsp minced garlic - more or less to taste
3 c chopped cabbage
1/4 c finely diced carrot
1 large russet potato - cubed
1/2 tsp dill weed
1/4 tsp cayenne pepper - or more to taste
3 c vegetable or chicken broth
3 Tbsp cornstarch
2 Tbsp cold water
2 c milk - more if needed
1 c whole kernal corn - canned or frozen
1/2 c shredded pepper jack cheese
salt and pepper to taste
shredded cheddar cheese for garnish
bacon bits for garnish
snipped chives for garnish

Steps:

  • 1. In dutch oven melt butter then add the onion and celery and saute until tender. Stir in the garlic and cook for 1 minute.
  • 2. Add cabbage, carrot, potato, dill weed, cayenne pepper, cubed potato and broth. Bring to a boil then drop heat down to simmer and cook until the cabbage is tender.
  • 3. In small bowl whisk the cornstarch and cold water together to make a slurry. Add to the hot soup, stir and simmer until thickened.
  • 4. Add the milk and stir to blend. Simmer until thickened. If the chowder is a bit too thick add more milk until you reach desired consistency. Sprinkle in the pepper jack cheese and the corn. Simmer - stirring frequently - until the cheese has melted and the chowder is warmed through. Salt and pepper to taste then serve with preferred garnishes.

6 ounces half-and-half (You can also substitute sour cream for half and half if you desire a thicker dressing)
1 1/2 cups salad dressing
7 ounces white vinegar
1 1/2 cups sugar
1/2 tablespoon Zenders chicken seasoning poultry seasoning
1 head cabbage, finely shredded
1/4 cup carrot, shredded,per lb of cabbage
1/4 cup onion, finely chopped,per lb. of cabbage
1/4 cup red cabbage, shredded,per lb. of cabbage
1/4 cup green pepper, finely chopped,per lb. of cabbage (I also sometimes use red pepper too)

Steps:

  • Mix first 5 ingredients until smooth.
  • (Zender's seasoning can be purchased at the restaurant or by mail order.) It contains garlic and paprika along with some other spices.
  • I use the Zender's seasoning.
  • Store in refrigerator.
  • Chill before using.
  • Shred cabbage.
  • Add carrots, onions, red cabbage and green peppers.
  • Add dressing until it coats the cabbage but doesn't make it soggy.
  • Recipe may be halved as it makes a large quantity, otherwise.

1 tablespoon extra virgin olive oil
1 medium onion, chopped
1 russet potato, peeled and grated
3/4 pound cabbage (about 1/2 medium head), cored and shredded
Salt to taste
5 cups water, chicken stock or vegetable stock
1 Parmesan rind
Freshly ground pepper to taste
2 cups low-fat milk
1 cup grated Gruyère cheese
6 1/2-inch thick slices of French or country bread, toasted and cut into small squares
Minced fresh chives

Steps:

  • Heat the oil over medium heat in a large, heavy soup pot. Add the onion and cook, stirring, until tender, about 5 minutes. Add the grated potato, the shredded cabbage and 1/2 teaspoon salt. Stir together for a minute, taking care that the potatoes don't stick to the pot, and add the water or stock, the Parmesan rind, and salt and pepper to taste. Bring to a simmer, cover and simmer over low heat for 30 minutes, until the vegetables are tender.
  • Add the milk to the soup. Stir to combine well and heat through without boiling. A handful at a time, stir the Gruyère into the soup and continue to stir until the cheese has melted. Taste and adjust seasonings. Remove the Parmesan rind. Serve, garnishing each bowl with a handful or toasted croutons and a sprinkling of minced chives.

1 cabbage (shredded)
1 onion (chopped)
1 celery rib (chopped)
4 chicken breasts (diced)
1 tablespoon butter
1 tablespoon olive oil
1/2 cup rice
1 cup chicken broth
1/4 cup white wine
1 1/4 cups bechamel sauce (envelope mix, or your own)
1 (8 ounce) can Campbell's Cream of Chicken Soup
1/4 cup milk
1/2 teaspoon thyme
salt
pepper
1 cup buttered bread crumb

Steps:

  • Boil cabbage in salted water for 5 minutes, drain and put aside.
  • Melt butter and oil in large skillet, brown chicken until golden.
  • Add onion and celery, continue cooking until vegetables are translucent, but not cooked through.
  • Add rice, chicken broth and wine, bring to a good simmer, cook until rice is tender, approx 15 minutes.
  • Prepare bechamel sauce as per indications on package, incorporate cream of chicken soup and milk, mix well, heat through.

a 2 1/2-pound cabbage (preferably with dark-green outer leaves intact)
1 pound parsnips (about 3 large)
1 onion (about 1/2 pound)
1 pound russet (baking) potatoes (about 2 medium)
3 1/2 tablespoons unsalted butter
2 teaspoons salt
freshly grated nutmeg to taste
5 ounces fresh Robiola cheese* (about 150 grams) or mascarpone cheese* (about 2/3 cup)

Steps:

  • Keeping cabbage whole, cut out and discard core and any discolored outer leaves. Beginning at top of head and working with 1 leaf at a time, remove 6 outer leaves, rolling each one back on itself until it can be loosened intact from head, and reserve. Cut remaining cabbage head into 8 wedges and cut each wedge crosswise into 3 pieces. Separate layers of cabbage pieces. Peel parsnips and diagonally cut into 1/8-inch-thick slices. Chop onion. Peel potatoes and cut crosswise into 1/8-inch-thick slices.
  • Bring a large kettle of salted water to a boil and cook reserved cabbage leaves until just tender, 3 to 5 minutes. With a slotted spoon transfer cabbage leaves to a kitchen towel to drain. Add cabbage pieces to boiling water and cook until crisp-tender, about 3 minutes. With slotted spoon transfer pieces to a colander to drain and transfer to a bowl. Add potatoes to boiling water and cook until just tender, about 4 minutes. With slotted spoon transfer potatoes to colander to drain and transfer to another bowl. Add parsnips to boiling water and cook until just tender, about 3 minutes. Drain parsnips in colander.
  • In a 12-inch heavy skillet cook onion in 3 tablespoons butter over moderately low heat, stirring, until softened. Add cabbage pieces, salt, nutmeg, and pepper to taste and cook mixture over moderate heat, stirring occasionally, until cabbage is tender, about 10 minutes. If any liquid remains in skillet, cook mixture over high heat until liquid is evaporated, about 1 minute.
  • If using Robiola, cut into pieces. Stir Robiola or mascarpone into cabbage mixture and cook over moderate heat, stirring, until cheese is melted.
  • Preheat oven to 375°F.
  • Butter a 2-quart ovenproof round serving dish (about 8 1/2 to 9 inches across and 2 1/2 inches deep) and line with cabbage leaves, letting leaves overhang 1 to 2 inches. Arrange half of potatoes in serving dish and season with salt and pepper. Top potatoes in dish with half of cabbage mixture and arrange half of parsnips over cabbage. Repeat layering with remaining potatoes, cabbage mixture, and parsnips, arranging last layer of parsnips decoratively around edge of casserole and leaving cabbage exposed in center. Dot parsnips with remaining 1/2 tablespoon butter. Fold cabbage leaves over parsnips and cover tightly with a double layer of foil. Casserole may be prepared up to this point 1 day ahead and chilled. Bring casserole to room temperature before proceeding. Bake casserole until heated through and bubbling, about 1 hour.
  • Let casserole stand 10 minutes before serving.

1/2 head green cabbage (about 1 1/2 pounds)
Sea salt
8 tablespoons unsalted butter
Freshly ground white pepper to taste
6 tablespoons heavy cream
1 shallot, minced
1/4 cup dry white wine, like chardonnay
1/4 cup best quality sherry vinegar
1 1/2 pounds fresh salmon fillet, skin attached but scaled, cut into 4 or 8 equal portions
1 tablespoon extra-virgin olive oil
Fresh chives, snipped with scissors, for garnish
Handful of whole chervil or flat-leaf parsley leaves for garnish

Steps:

  • Trim the cabbage, discarding any tough outer leaves and the inner core. Slice by hand into thin slivers. Bring a large pot of salted water to a boil and blanch the cabbage (cook for one minute). Remove and drain well.
  • In a large skillet, combine the cabbage with two tablespoons of the butter and cook over low heat for two to three minutes. Season, cover and cook until slightly wilted but still crunchy, about five minutes. Stir in five tablespoons of the cream and continue cooking until warmed through, one to two minutes. Set aside and keep warm.
  • Prepare the sauce. In a small saucepan combine the shallot with a tablespoon of butter and a pinch of salt. Cook over low heat until soft and translucent, three to four minutes. Add the wine and vinegar and bring to a boil. Cook until reduced by two-thirds, about two to three minutes. Remove from the heat. Gradually whisk in the remaining tablespoon of cream and five tablespoons of butter. Whisk until all the butter is incorporated and the sauce is smooth and creamy. Taste for seasoning. Transfer to the top of a double boiler set over gently simmering water. Cover loosely and keep warm over low heat.
  • Prepare the salmon with a sharp knife. Score the salmon in a crisscross pattern, cutting through the skin and just slightly into the flesh. Generously season both sides of the salmon.
  • In a large nonstick skillet, heat the oil over moderately high heat. When hot, put the salmon fillets skin side down in the skillet. Cook without turning until the skin is very crisp, two to three minutes (cooking time will depend on the thickness of the salmon). With a wide spatula, turn the salmon over and cook it barely 30 seconds. Leave the salmon in the pan and remove it from the heat. The salmon will continue the cooking process as you dress the plates.
  • Spoon the cabbage into the center of four to eight warmed dinner plates. Top with a slice of salmon, skin side up, and spoon the warm sauce around the cabbage. Garnish with the herbs and serve immediately.
