1 large onion, chopped
1/4 cup chopped green pepper
1/2 cup all-purpose flour
3 cups chicken broth
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoons chopped jalapeno pepper, optional
1 can (15 ounces) chili with beans
1 package (8 ounces) cream cheese, cubed
8 cups cubed cooked chicken
24 flour tortillas (6 inches), warmed
6 cups shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350°. In a Dutch oven, heat butter over medium-high heat. Add onion and pepper; cook and stir until tender. Stir in flour until blended; gradually stir in broth. Bring to a boil; cook and stir 2 minutes. Reduce heat; stir in tomatoes, seasonings and, if desired, jalapeno. Cook 5 minutes. Add chili and cream cheese; stir until cream cheese is melted. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover burritos with foil; bake as directed, increasing baking time to 50-55 minutes or until heated through and a thermometer inserted in center reads 160°.

1 cup water
1 cup milk
2 cups chopped deli rotisserie chicken
2 tablespoons lime juice

1/3 cup milk
10 Old El Paso™ flour tortillas for burritos (8 inch)
1/2 cup fresh salsa

Steps:

  • In 10-inch skillet; heat oil over medium heat until hot. Stir in uncooked rice (from Hamburger Helper box); continue cooking 2 to 3 minutes or until rice starts to brown. Stir in water, 1 cup milk and the sauce mix (from Hamburger Helper box) until blended. Heat to boiling.

½ yellow onion, chopped
1 (14 ounce) can refried beans
1 cup shredded sharp Cheddar cheese
1 (1 ounce) package taco seasoning
6 (9 inch) flour tortillas

8 ounces sour cream
½ cup salsa, or to taste
1 ½ cups shredded sharp Cheddar cheese

1 1/2 lbs boneless skinless chicken breasts
1 cup whole kernel corn, frozen
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes and green chilies, undrained
1 (4 ounce) can diced green chilies
3 tablespoons ground cumin
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1 dash cayenne pepper
1 (8 ounce) package reduced-fat cream cheese
8 flour tortillas, warmed (8 inches)
nonstick cooking spray
sour cream
shredded cheddar cheese
shredded lettuce
chopped tomato

Steps:

  • Use nonstick spray to spray the interior of 5-6 qt crockpot. (I actually use the crockpot liners for easy cleanup.).
  • If doing, season salt and pepper each side of the chicken.
  • Lay raw chicken in bottom of crock.
  • In medium size bowl, stir together the corn, beans, tomatoes, green chilis and spices. Pour over chicken.
  • Cook on low 4 to 5 hours until chicken is tender and no longer pink.
  • Pull out chicken and shred using 2 forks. (Careful meat is very hot).
  • Return chicken to crock pot and stir to combine.
  • Place 8 oz of cream cheese on top of mixture and let melt about 15 minutes. Then stir to completely combine.
  • Let the whole mixture set for another 15 minutes before serving to let the flavors meld.
  • Warm tortilla. Add about 1/2 cup of chicken mixture and roll/fold up burrito.
  • Top with your favorite toppings.
