1 tablespoon Dijon mustard
1 tablespoon cider vinegar
1 tablespoon freshly squeezed lemon juice
1 tablespoon sugar
1 teaspoon coarse salt
1/2 cup mayonnaise
1/4 cup sour cream
1 small green cabbage, (about 1 3/4 pounds), finely shredded
2 medium carrots, cut into 1/8-inch-thick matchsticks or coarsely grated
1 small onion, coarsely grated (optional)

Steps:

  • Whisk together mustard, vinegar, lemon juice, sugar, salt, mayonnaise, and sour cream in a small bowl. Refrigerate dressing, covered, until ready to use, or up to 2 days.
  • Put cabbage, carrots, and onion (if desired) in a large bowl. Pour in dressing, and toss thoroughly. Refrigerate, covered, until slaw begins to soften, 1 to 2 hours. If not using immediately, refrigerate, covered, up to 2 days. Just before serving, toss coleslaw again.

After doing some research, making dozens of different dressings, and trying to find the flavor that I like, I came up with this dressing for coleslaw that became a hit. I'm always asked for this recipe. What surprised me was at a potluck when a culinary chef asked me for my recipe. He told me that it was one of the best he had ever tasted since he had left the southern part of the USA.

2 large eggs
3 tablespoons granulated sugar
1 1/2 tablespoons all-purpose flour
1 1/4 teaspoons salt
1/2 teaspoon ground mustard
1/4 cup cider vinegar
1/4 cup water
1 tablespoon butter or 1 tablespoon olive oil
3 tablespoons cream or 3 tablespoons milk
6 cups shredded cabbage (about 1 3/4 lbs)
1 large shredded carrot, about (3/4 cup)
1 celery, finely chopped (1/2 cup)
1 small onion, finely chopped (about 1/4 cup)
1/2 green bell pepper, finely chopped (about 1/2 cup)
1/4 cup minced parsley
1 1/2 teaspoons celery seeds
1 teaspoon mustard seeds
1/2 teaspoon fresh coarse ground black pepper

Steps:

  • In small saucepan, beat the eggs thoroughly; add the sugar, flour, salt and mustard.
  • Combine the vinegar and the water and beat into the egg mixture, then add the butter or oil.
  • Cook over low heat, stirring constantly until thick, about 5-8 minutes. The mixture will be very lumpy looking (not to worry) beat it to smoothness.
  • When very thick, remove from heat and beat in cream or milk. Cool.
  • this can be made a day ahead and refrigerated.
  • In a large bowl, combine all of the coleslaw ingredients.
  • Add the cooled dressing and toss lightly to coat with the dressing.

1/3 cup low-fat mayonnaise (I just use miracle whip)
1/4 cup fat free sour cream
1 tablespoon sugar
1 tablespoon prepared mustard (I made it with dijon as well, but you can use which ever one you like best)

1/2 teaspoon dried dill
1/4 teaspoon salt (optional)
