I saw a similar pie on a jamie Oliver program, and decided to give it a try when I was given a fish last night. The results were pretty tasty. I oven baked our fish in foil, saving the juices, and replacing a little of the wine with them.

750 g potatoes
2 tablespoons butter
2 tablespoons sour cream
1/4 cup milk
salt and pepper
2 tablespoons butter (extra)
1 small onion, finely chopped
2 tablespoons flour
1/2 cup milk (extra)
1/2 cup white wine
400 g cooked flaked fish
1 (310 g) can whole corn kernels, drained
1/2 cup frozen peas, defrosted,drained
2 tablespoons capers
1 tablespoon lemon juice
1/2 teaspoon dried dill
1 tablespoon chopped fresh parsley
salt and pepper
2 hard-boiled eggs, quartered
1 cup grated tasty cheese

Steps:

  • Preheat your oven to 190c.
  • Cut up the potatoes, and boil in lightly salted water until tender; drain, add the butter, sour cream and milk, mash until smooth, seasoning with salt and pepper.
  • Meanwhile, melt the extra butter in a saucepan, and saute the chopped onion until soft-about 5 minutes.
  • Add the flour and cook over low heat about 2 minutes before adding the extra milk and wine.
  • Bring to the boil and stir until thickened.
  • remove from the heat and add the fish, corn, peas, capers, lemon juice, dill, parsley and salt and pepper.
  • Mix well, then fold the egg quarters through very gently.
  • Pour into a large casserole dish, top with the mashed potatoes, then sprinkle over the grated cheese.
  • Bake in the oven for about 30 minutes or until the filling is bubbling, and the top golden brown.

1 small onion, diced
535 g sweet corn soup
1/2 cup frozen peas
1/4 cup parsley, chopped
1 lemon zest
400 g smoked fish fillet, flaked
450 g kumara or 450 g potatoes
1/2 cup skim milk
1/2 salt and pepper

Steps:

  • Boil kumara and mash, add milk and mix thru.
  • Heat a dash of oil in a non stick frying pan and cook onion until soft.
  • Pour in the Creamy Corn Soup , frozen peas, parsley and lemon zest. Stir over the heat for 2 minutes.
  • Stir in the smoked fish then pour into a medium sized oven proof dish.
  • Place the mashed kumara on top of the fish pie.
  • Place in an oven preheated to 180°C for 25-30 minutes. Finish under the grill for a few minutes to get a great golden top.
  • Serve with a salad or your favorite green vegetables.

5 large potatoes, peeled and cut into 1 inch cubes
2 eggs
1 onion, finely chopped
extra virgin olive oil
1/2 pint double cream
3 ounces strong cheddar cheese, grated
1 lemon, juice of
1 teaspoon English mustard
parsley, finely chopped
1 lb haddock or 1 cod fish fillet, skinned and sliced into strips
4 ounces sweetcorn
8 ounces cooked shelled prawns
nutmeg
seasoning

Steps:

  • Pre-heat the oven to 230C/450F/Gas MK 8.
  • Put the potatoes into boiling, salted water and bring back to the boil for 2 minutes.
  • Carefully add the eggs to the pan and cook for a further 8 minutes until the eggs are hard boiled and the potatoes cooked.
  • Drain the potatoes. Remove the eggs and cool under cold water, then shell and quarter them.
  • In a separate pan, slowly fry the onion in a little olive oil for about 5 minutes, then add the cream and bring just to the boil. Remove from the heat and add the cheese, lemon juice, mustard and parsley.
  • Put the fish, prawns, sweetcorn and eggs into an ovenproof dish. Pour over the sauce and gently mix together.
  • Mash the potatoes with a little olive oil, seasoning and nutmeg. Spread over the top of the fish mixture and bake in the oven for 25-30 minutes until the potatoes are golden.

  • Put the milk and fish into a saucepan with some salt and pepper for seasoning, bring the milk to the boil and bubble gently for five minutes before removing fish with a fish slice and leaving to cool. Don't get rid of the milk!
  • Peel the potatoes and cut them into chunks, boil in lightly salted water for 10-15 minutes until soft. Once cooked, drain and mash, adding two tbsp of milk from the fish saucepan and a tbsp of butter. Meanwhile, gently break the fish into flakes with a fork.
