CREAMY GOAT CHEESE CHIVES DIP

Creamy Goat Cheese Chives Dip image

This is a fresh summer dip that my sis and me came up with when needing to use up some things that were left in the fridge. It is tangy from the goats cheese with a nice freshness added by cucumber and tomatoes. Goes great with crudites and crackers. I hope youll enjoy this as much as we do!

Time 10m

Yield 4-6 serving(s)

Number Of Ingredients 7

4 tablespoons goat cheese (cream cheese)
3 tablespoons cream cheese with chives
1 teaspoon light sesame oil
1 tablespoon fresh chives, snipped
6 cherry tomatoes, chopped (I leave the seeds in for moisture, but you may deseed them, too)
1/4 cucumber, deseeded and finely diced
fresh ground pepper

Steps:

  • In a bowl stir together goats cheese and cream cheese with oil. Add cucumber, chives and tomatoes and mix well. If you have deseeded your tomatoes you might need to add a little milk to reach the desired consistency.
  • Season with pepper to taste.
  • Serve with crackers or veggies of your choice.

Tips:

  • Use high-quality goat cheese: The better the goat cheese, the better the dip will be. Look for a goat cheese that is creamy and spreadable, with a mild flavor.
  • Chives are a must: Chives add a delicious oniony flavor to the dip. If you don't have chives on hand, you can substitute green onions or shallots.
  • Don't overmix the dip: Overmixing the dip will make it too runny. Mix it just until the ingredients are combined.
  • Serve the dip with your favorite dippers: Some popular dippers for goat cheese dip include crackers, bread, vegetables, and fruit.
  • Make the dip ahead of time: This dip can be made up to 2 days in advance. Just store it in the refrigerator until you're ready to serve.
