HATCH CHILE CREAM CHEESE DIP

Hatch Chile Cream Cheese Dip image

Provided by Valerie Bertinelli

Categories     appetizer

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 9

1 Hatch green chile or 1 cup canned diced Hatch chiles
1 tablespoon canola oil
1/2 cup finely chopped scallions, white and light green parts only, plus 2 tablespoons sliced dark green parts, for garnish (4 to 5 scallions)
1 pound cream cheese, at room temperature
Kosher salt and freshly ground black pepper
1/2 cup sour cream
2 cups Mexican blend shredded cheese (8 ounces)
1 teaspoon lime zest (2 limes)
Blue and white tortilla chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the Hatch chiles on a burner over medium-low heat until the skins char and blister; this will happen very quickly. Remove to a bowl, cover with plastic wrap and set aside for 15 minutes to steam.
  • Heat a 10-inch cast-iron skillet over medium heat and add the canola oil, swirling the pan to coat. Add the scallions and cook until slightly softened, stirring, 1 to 2 minutes.
  • Meanwhile, peel and seed the chile and then it cut into medium dice. Turn the heat under the skillet to low and add the chiles, cream cheese and some salt and pepper. Cook, stirring often, until the cream cheese is melted. Add the sour cream, 1 1/2 cups of the shredded cheese, and the lime zest. Smooth the top and then sprinkle with the remaining 1/2 cup shredded cheese.
  • Bake until the cheese is melted and bubbly and just starting to brown, about 15 minutes.
  • Garnish with the dark green scallions and serve with tortilla chips.

"5 THINGS" HOT MEXICAN GREEN CHILE DIP

I take this dip to almost every gathering I go to.....and have never had to haul any of it home! It's never had a real name, but when people ask what's in it?/how do you make it?, the response is always the same: "It's so easy. Five things and stir!". You can actually add additional items like diced jalapenos, sliced black olives, etc to make it your own.....but the basic recipe is always a hit! I use the extra hot Rotel to kick it up, but for those who prefer milder flavor, you can use the regular or even 'mild' Rotel. I DO highly recommend Rotel (rather than any other brand of diced tomatoes w/chilis)...there's just something about the flavor that's very unique. Enjoy!

Categories     Cheese

Time 40m

Yield 6-8 , 6-8 serving(s)

Number Of Ingredients 5

16 ounces sour cream
2 1/2 cups of shredded cheddar cheese (any other mexican style cheese or cheese blend works fine)
1 (10 ounce) can rotel diced tomatoes and green chilies
1 (4 ounce) can diced green chilies
1 (1 1/2 ounce) package Knorr vegetable soup mix

Steps:

  • Preheat oven to 350 degrees.
  • In mixing bowl, first combine the sour cream and vegetable soup mix.
  • Then drain the excess liquid off of the Rotel and green chiles and stir both cans in with the sour cream mixture. (tip -- don't fuss over the draining, just what pours out of the can easily).
  • Lastly, add 2 cups of the cheese and stir everything together.
  • Pour mixture into a 10" round baking dish, top with additional 1/2 cup or more of cheese. (Remember you will be serving this in what you cook it in: I always use a round, stoneware baking dish, but a deep dish pie plate or smaller ceramic casserole dish would work as well!).
  • Bake for 30 minutes (or until top is golden and bubbly).
  • Allow the dish to cool for at least 20 minutes before serving with your favorite tortilla or corn chips. Happy dipping!

Tips:

  • Choose the right chiles: For a milder dip, use Anaheim or poblano chiles. For a spicier dip, use serrano or jalapeño chiles. You can also use a combination of chiles to achieve your desired level of heat.
  • Roast the chiles: Roasting the chiles brings out their flavor and makes them easier to peel. You can roast the chiles in the oven, on a grill, or over an open flame. The chiles should have some char marks to provide a smokiness flavor.
  • Remove the seeds and ribs: Once the chiles are roasted, let them cool slightly. Then, carefully remove the seeds and ribs. This will help to reduce the spiciness of the dip.
  • Use a food processor: A food processor is the easiest way to make a smooth and creamy green chile dip. Simply add all of the ingredients to the food processor and blend until smooth.
  • Serve with your favorite toppings: Green chile dip is delicious served with a variety of toppings, such as shredded cheese, diced tomatoes, sour cream, and cilantro. You can also serve it with tortilla chips, crackers, or crudités.

Conclusion:

Creamy green chile dip is a delicious and versatile appetizer that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Serve it with your favorite toppings and enjoy!
