CREAMY HAM AND RICE SOUP

Creamy Ham and Rice Soup image

Comfort in a bowl. A quick and hearty soup full of shredded carrots, scallions, diced ham, cooked rice and cream.

Provided by cherin

Time 30m

Yield Serves 4

Number Of Ingredients 9

6 tbsp butter
1 scallion, chopped
1 small carrot, peeled and grated
1/3 cup flour
3.5 cups chicken broth
1 cup finely chopped cooked ham
2 cups cooked rice
1 cup single cream
salt and pepper, to taste

Steps:

  • In a medium size saucepan cook scallions and carrots in butter to soften. Add flour and stir until thoroughly combined with butter.
  • Slowly add chicken broth, stirring constantly to avoid lumps. Bring to a boil and simmer 2 min.
  • Add ham, rice, cream, salt and pepper. Heat through, but do not bring to a boil.

Tips:

  • Choose the right ham. Fresh, smoked ham or country ham can be used for this soup. If using smoked ham, reduce the amount of salt added to the recipe.
  • Soak the rice. Soaking the rice for 30 minutes before cooking helps to remove excess starch and results in a creamier soup.
  • Use fresh vegetables. Fresh vegetables will give the soup the best flavor. If using frozen vegetables, thaw them completely before adding them to the soup.
  • Don't overcook the soup. The soup is done when the rice is tender and the vegetables are cooked through. Overcooking the soup will make the rice mushy and the vegetables limp.
  • Season to taste. Taste the soup before serving and adjust the seasonings as needed. Add more salt, pepper, or herbs if desired.
  • Serve with your favorite toppings. Creamy ham and rice soup is delicious served with a variety of toppings, such as shredded cheese, sour cream, chopped green onions, or crumbled bacon.

Conclusion:

Creamy ham and rice soup is a hearty, delicious, and easy-to-make soup that is perfect for a cold day. It is also a great way to use up leftover ham. With its creamy texture, satisfying flavor, and versatility, creamy ham and rice soup is sure to become a family favorite.
