1/4 tsp ground black pepper
2 Tbsp extra-virgin olive oil
3/4 cup low sodium chicken broth
1 Tbsp prepared horseradish
1 Tbsp dijon mustard
1/4 tsp ground red pepper (optional)
1 Tbsp unsalted butter
2 Tbsp half-and-half
1 Tbsp fresh chives (finely chopped)

Steps:

  • Slice pork into 1-inch medallions and season with the salt and pepper.
