1 1/2 cups yellow cornmeal
1/4 cup (1/2 stick) unsalted butter
1/2 cup heavy whipping cream

Steps:

  • Bring 6 cups of water to a boil in a heavy large saucepan. Add 1 3/4 teaspoons of salt. Gradually whisk in the cornmeal. 2 teaspoons kosher salt
1 tablespoon unsalted butter, plus more for the dish
1/2 cup cream cheese
1 cup crumbled gorgonzola
4 tablespoons olive oil
1 1/2 lbs cremini mushrooms or 1 1/2 lbs button mushrooms, stems discarded and caps thinly sliced
2 small shallots, finely chopped
1/2 teaspoon black pepper
2 teaspoons fresh thyme leaves

Steps:

  • Heat oven to 350°F.
  • Bring 4 1/2 cups water to a boil.
  • Whisking constantly, slowly add the polenta.
  • Add 1 1/2 teaspoons of the salt and the butter.
