CREAMY WHITE WINE SHRIMP ALFREDO RECIPE - (4.1/5)

Creamy White Wine Shrimp Alfredo Recipe - (4.1/5) image

Provided by á-46334

Number Of Ingredients 14

For the Pasta:
1/2 lb. (8 oz.) fettuccine
2 Tbsp. unsalted butter
2 Tbsp. all purpose flour
1/2 cup dry white wine
1 cup milk (I used 1%)
salt and pepper to taste
3/4 cup parmesan cheese
1/4 cup fresh parsley, chopped, for garnish
For the Shrimp:
1/2 lb. medium-sized shrimp, peeled and deveined
1 Tbsp. olive oil
1 clove garlic, minced
salt and pepper to taste

Steps:

  • For the Pasta: 1.Cook fettuccine in very salty water until al dente. Drain, set aside, and return empty pot to the stove. 2.Melt butter in pot over medium heat. When butter is melted, whisk in flour to form a roux. Cook for 1 minute until roux is fragrant. 3.Slowly add white wine to roux, whisking constantly to incorporate. The mixture will thicken pretty quickly - just keep whisking! 4.Add milk to mixture and whisk to combine. Bring mixture to a low simmer, whisking frequently, then remove from heat and stir in salt, pepper, and cheese. Stir until cheese has melted and you have a smooth sauce. For the Shrimp: 1.Heat oil in a medium-sized skillet until shimmering. Add garlic, shrimp, salt and pepper and stir to combine. Cook, stirring occasionally, until shrimp is pink and cooked through. Shrimp quicks very quickly, so keep an eye on it - they shouldn't take more than 5 or 6 minutes! To Assemble: 1.Add cooked pasta and shrimp to sauce pot and toss to combine. Top with fresh chopped parsley for garnish and serve immediately.

INSTANT POT CREAMY SHRIMP ALFREDO PASTA

Instant Pot Creamy Shrimp Alfredo Pasta image

Number Of Ingredients 13

3/4 lb fettuccine or penne pasta
3 cups water
1 lb shrimp, peeled and deveined
1 Tbsp olive oil
1 small onion, finely chopped
2 Tbsp butter
1 garlic clove
1/3 cup chicken broth
2 cups heavy whipping cream
1/2 cup parmesan cheese
Salt and pepper to taste
Sprinkle of paprika
Parsley or basil for garnish (optional)

Steps:

  • Place noodles and water in the Instant Pot. Mix so the noodles are covered. (I broke my noodles in half)
  • Close the lid, turn the valve to sealing, and push the "Manual" or "Pressure Cook" button. Set it to cook for 4 minutes.
  • After the noodles are done cooking, remove them from the pot and set to the side.
  • Press the "Saute" button on the Instant Pot. After it says "hot" add 1 Tablespoon of olive oil. Season the shrimp with salt, pepper, and paprika. Add shrimp and cook for 1 -2 minutes on each side. You'll know they are done when they are no longer translucent. The insides will be white and the outsides will be a golden/pink color. Remove the shrimp from the Instant Pot and set aside.
  • Next, add butter, onion, and garlic and saute until the onion is golden brown. Add chicken broth and scrape the bottom of the pot to deglaze.
  • Add cream and simmer for 2 minutes. Add parmesan and stir until creamy and smooth. Press the "Cancel/Keep warm" button. Add paprika, salt, and pepper to taste. Stir in the shrimp and pasta.
