Salad:
4 heaping cups chopped broccoli
1 1/2 cups chopped strawberries
1/4 cup diced red onion
1 pear, chopped
1 sweet apple like Fuji, chopped
1 large avocado, chopped
3/4 cup dried cranberries*
1/2 cup crumbled feta
1/2 cup sunflower seeds
1/2 cup caramelized pecans, chopped (optional) recipe HERE
Dressing:
1/2 cup real mayonnaise (full fat is best)
1/2 cup vanilla Greek yogurt (I use nonfat)
1 tablespoon lemon juice
1 tablespoon red wine vinegar
1-2 Tablespoons sugar
1 tablespoon poppy seeds
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Add all of the salad ingredients to a large bowl except avocados. In a separate medium bowl, whisk together the Dressing ingredients. Add dressing to Salad and toss until evenly coated. Best if chilled for at least 30 minutes up to overnight. Toss with avocados before serving.

Tips:

  • Fresh strawberries: Use the ripest, sweetest strawberries you can find. This will make all the difference in the flavor of your salad.
  • Chill the salad before serving: This will help the flavors to meld and make the salad even more refreshing.
  • Use a variety of greens: A mix of lettuces, spinach, and arugula adds texture and flavor to the salad.
  • Don't skimp on the dressing: The creamy strawberry dressing is what makes this salad so special. Be sure to use enough to coat all the ingredients.
  • Add some crunch: Nuts, seeds, or croutons add a nice crunchy texture to the salad.
  • Serve immediately: This salad is best enjoyed fresh. The strawberries will start to wilt if you wait too long to serve it.

Conclusion:

This creamy strawberry salad is a light, refreshing, and flavorful dish that's perfect for any occasion. It's easy to make and can be tailored to your own personal preferences. So next time you're looking for a healthy and delicious salad, give this one a try. You won't be disappointed!
