CREOLE CHICKEN AND OKRA GUMBO

Yield 2 Servings; Can Be Doubled

Number Of Ingredients 8

2 tablespoons vegetable oil
2 tablespoons all purpose flour
1 cup sliced frozen whole okra
1 14 1/2-ounce can low-salt chicken broth
1 14 1/2-ounce can diced tomatoes
1/2 pound skinless boneless chicken thighs, cut into 1-inch pieces
1 teaspoon dried thyme
3/4 to 1 teaspoon hot pepper sauce (such as Tabasco)

Steps:

  • Stir vegetable oil and flour in large saucepan over high heat until smooth and dark brown, about 3 minutes. Mix in okra, then chicken broth and tomatoes with their juices; simmer 3 minutes. Sprinkle chicken with thyme, salt and pepper. Add to saucepan. Simmer gumbo uncovered until chicken is cooked through, about 10 minutes. Season gumbo to taste with hot pepper sauce , salt and pepper and serve.

Tips:

  • Choose fresh, tender okra: Look for okra pods that are small, firm, and have smooth, bright green skin. Avoid okra that is bruised, wrinkled, or has brown spots.
  • Trim the okra properly: Cut off the stem and blossom ends of the okra pods, but leave the pods whole. This will help to prevent the okra from becoming slimy.
  • Soak the okra in vinegar water: This is an optional step, but it can help to reduce the okra's sliminess. Soak the okra pods in a bowl of vinegar water for 30 minutes before cooking.
  • Cook the okra quickly: Overcooking the okra will make it slimy. Cook the okra for just a few minutes, until it is tender but still slightly crunchy.
  • Use a well-seasoned cast iron skillet: A well-seasoned cast iron skillet will help to prevent the okra from sticking. If you don't have a cast iron skillet, you can use a nonstick skillet.
  • Don't crowd the skillet: When cooking the okra, don't crowd the skillet. This will cause the okra to steam instead of fry, and it will become slimy.
  • Serve the okra hot: Creole chicken and okra is best served hot. Serve it over rice, mashed potatoes, or grits.

Conclusion:

Creole chicken and okra is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, and the okra is crispy and flavorful. This dish is sure to be a hit with your family and friends.
