A spicy Cajun country style pork roast! Serve roast with rice and gravy and try not to eat too much! Brought it to a family gathering everyone loved it!

1 onion, cut into chunks
½ green bell pepper
2 stalks celery stalk, chopped
3 cloves garlic
2 tablespoons Creole seasoning, divided
5 pounds boneless pork roast
⅓ cup bacon grease

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Combine the onion, green pepper, celery and garlic in the container of a food processor or blender. Process until finely chopped. Stir in 1 tablespoon of the Creole seasoning.
  • Cut about 8 slits across the roast about 1/2 inch deep. Pack the vegetable mixture into the slits. Rub the remaining tablespoon of Creole seasoning all over the roast. Coat the roast generously with bacon grease, and place in a roasting pan.
  • Bake uncovered for 1 hour, until browned, then cover, and continue cooking for about 3 more hours, or until tender. After the roast is done, you can skim off some of the excess fat and thicken the drippings with a mixture of water and flour if you want your gravy thicker.

1 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon each chili powder, paprika, pepper and ground coriander
Pinch each ground cloves and garlic powder
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion
1 tablespoon butter
1 can (4 ounces) mushroom stems and pieces, drained
1 can (6 ounces) tomato paste, divided
1 boneless pork shoulder butt roast (2 to 3 pounds)
2 tablespoons all-purpose flour

Steps:

  • Combine all of the seasonings; set aside 1/2 teaspoon. In a saucepan over low heat, saute green pepper, onion and remaining seasoning mixture in butter until vegetables are tender. Stir in mushrooms and half the tomato paste. Spread mixture over the roast; place in shallow baking pan. , Bake, uncovered, at 325° for 2-1/2 to 3 hours or until a thermometer reads 160°-170°. Place roast on a serving platter; keep warm. , Transfer all but 2 tablespoons drippings to a measuring cup. Add enough water to measure 1-1/2 cups; set aside. Stir flour into drippings in pan. Gradually blend the 1-1/2 cups of liquid into flour mixture, stirring until smooth. Add reserved seasoning mixture and remaining tomato paste. Bring to a boil over medium heat; boil for 2 minutes, stirring constantly. Serve with the roast.

1/2 cup all-purpose flour
2 cups chopped onions (about

1 cup chopped celery
1 medium green bell pepper, chopped
4 links andouille smoked sausage, chopped (about 1 pound, 2 cups)
2 tablespoons minced or chopped garlic (about 4 large cloves)
4 cups chicken stock or 1 carton (32 ounces) low-sodium chicken broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
2 bay leaves
1/2 teaspoon dried sage
1/2 teaspoon dried oregano
1/2-1 teaspoon ground red pepper (cayenne), depending on personal taste
2 pounds boneless country-style pork ribs, cut into 1 1/2-inch pieces
Kosher salt and freshly ground black pepper
Hot pepper sauce or white vinegar
4 cups cooked long-grain white rice

Steps:

  • Make a roux by heating oil in a large, heavy pot over low heat. Stir in flour; cook and stir over low heat until mixture turns a rich red-brown color (about 20 to 25 minutes). Remove from heat; carefully stir in onion, celery, bell pepper and about 1 cup chopped sausage. Return pot to heat; cook and stir 5 minutes over medium heat. Stir in garlic, chicken stock or broth and tomato paste. Add Worcestershire sauce, bay leaves, sage, oregano and cayenne pepper; bring to a boil over high heat. Add pork pieces and reduce heat to simmer; cook uncovered for about 1 1/2 hours or until pork is tender. Stir in remaining chopped sausage; cook 5 minutes more to heat through. (At this stage, if you do not want to serve right away, stew may be refrigerated for up to 2 days.) Discard bay leaves and skim any visible fat, if desired. Add salt, pepper and hot pepper sauce to taste. To serve, spoon 1/2 cup rice into shallow soup bowls; ladle some of pork mixture over top. Add more hot pepper sauce, if desired. Makes 8 servings. Variation: Add 1 pound okra cut into 1/2-inch pieces during the last 20 minutes of cooking time.

3/4 lb lean boneless pork, stir-fry precut
1 cup tomato juice
1 tablespoon cornstarch
1 teaspoon chili powder
1 teaspoon lemon juice
1/2 teaspoon sugar
1/4-1/2 teaspoon ground red pepper
1 cup celery (sliced)
9 ounces frozen cut green beans (thawed)
1 green bell pepper (chopped)
2 cups hot cooked rice

Steps:

  • For sauce, stir together tomato juice cornstarch, chili powder, lemon juice, sugar, red pepper, & 1/4C water. Set aside.
  • Spray lARGE SKILLET WITH COOKING SPRAY & heat to medium high heat.
  • Add celery stirring for 2 minutes, add green pepper and thawed green beans; stir-fry bout 1 1/2minutes or until veggies are tender-crisp.
  • Remove, and add oil to hot skillet or wok, if necessary. Add pork and stir fry 2-3 minutesor until no longer pink. Remove from skillet.
  • Stir sauce and add to center of skillet /wok. Cook & stir until bubbly & thickened.
  • Return vegetables/pork & stir all ingredients together to coat.
  • Cook & stir for 2 minutes.
