Yield 10

Number Of Ingredients 2

1 cup of long or medium grain rice
1 1/2 cups water

Steps:

  • Rinse 1 cup of long- or medium-grain rice in a pot. Add 1 1/2 cups water (1 1/4 if using medium-grain rice) to the rice and bring to a boil.
  • Cover and simmer at low heat for 30 minutes. Remove from burner and allow to cool.
  • While rice is cooking, preheat oven to 300 F.
  • Place the rice on a baking sheet, making sure that it is about (but no more than) 1/4-inch thick.
  • Bake the rice for 50 to 55 minutes until it's dry.
  • Cool and cut into 2-inch squares. Store in a container until needed but don't freeze.
  • The rice is now ready to be deep-fried. The trick to using deep-fried crispy rice is to make sure that both it and the sauce or soup it is being added to are very hot. That way you will hear the crackling sounds. Unfortunately, this makes for a lot of last-minute work-you can't deep fry the rice crusts and then set them aside to add during the final stage of cooking. Instead, the rice should be deep-fried before the dish is served, with the soup or sauce being kept warm during this time. Deep-fry a few at a time, turning constantly until they brown and puff up (this will take only seconds). Drain on paper towels. Bring to the table, quickly pour the hot liquid over it, and listen to the rice snapping and popping. Safety Tip: If not handled properly, cooked rice has the potential to grow a bacteria called Bacillus cereus . To prevent this, make certain the rice is completely dried, then rapidly cooled, cut into squares, placed into a container, and refrigerated for no more than seven days before use.

PLAN/PURCHASE
1 c sushi rice
peanut oil, for cooking
your favorite sauce (more on that later)

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Cook the rice according to package directions.
  • 4. While the rice is still warm, shape it into squares.
  • 5. Chef's Note: I use a square mold to achieve the nice squares. In Japan the most popular shape was a pyramid.
  • 6. Chef's Tip: Why sushi rice? Sushi rice is very sticky, and will hold together better than other types of rice.
  • 7. Add a bit of peanut oil to a skillet over medium-high heat.
  • 8. Add the rice squares.
  • 9. Lightly brown them on all six sides, about 90 seconds per side.
  • 10. Remove from the oil and brush with your favorite sauce.
  • 11. Sauce: You can use just about anything that you wish for the sauce. • Japanese soy sauce • Oyster sauce • Tamari sauce • Japanese fish sauce • A mixture of tamari and honey (my favorite) • Various jams, like apricot or apple
  • 12. After brushing with the sauce, return them to the skillet, for a second browning, about 30 seconds per side.
  • 13. Chef's Tip: It's this second browning, that really infuses the flavor into the rice.
  • 14. ADDITIONAL VARIATION
  • 15. Instead of just rice, why not put a surprise in the center, like a piece of sesame chicken, or crispy beef...
  • 16. PLATE/PRESENT
  • 17. Remove from the skillet, and serve while still nice and warm. Enjoy.
  • 18. Keep the faith, and keep cooking.

Yield Makes 24 cereal treats

Number Of Ingredients 7

Nonstick cooking spray
4 tablespoons unsalted butter
One 10-ounce bag mini marshmallows
6 cups crispy rice cereal, such as Rice Krispies
1 teaspoon pure vanilla extract
Pinch kosher salt
Decorative toppings, optional (see Cook's Note)

Steps:

  • Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
  • Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
  • Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.

THE ORIGINAL RICE KRISPIES TREATS SQUARES

The Original Rice Krispies Treats Squares image

This is the recipe for the original rice krispies treats squares...It never fails! Plus, it is a great way to use up a box of cereal! For best results, use fresh marshmallows. I have replaced the butter once with Mott's Healthy Baking butter or oil substitute (it was basically an unsweetened apple sauce) and they still turned out great!

RICE KRISPY TREATS WITH ALL THE VARIATIONS

Rice Krispy Treats With All the Variations image

I love making these for parties. The unusual ones are usually first to go. You can mold them into any shape you lie and carve them, but I like them in little squares. Hope you try the variations and invent a few combinations of your own! Cooking time is drying time.

Time 15m

Yield 1 pan, 16 serving(s)

Number Of Ingredients 3

11 cups rice, krispies
16 ounces mini marshmallows
1/2 cup unsalted butter, plus more to grease the pan

Steps:

  • Measure out the Rice Krispies. Melt the butter and marshmallows very slowly. Pour over cereal and stir with a rubber spatula or a wooden spoon (or put gloves on and toss by hand). Press into a 9x13 buttered pan and let cool. Cut into squares.
  • Variations:
  • SQUARES: Use half Rice Krispies and half Cocoa Pepples, Fruity Pebbles, Froot Loops, or any other cereal combo you like.
  • TOPPINGS: Mix a 12 ounce bag of choclolate chips with two tablespoons of butter, melt and spread over treats before you cut them. Cool and cut. Also use white chocolate and peanut butter chips or butterscotch chips to replace the chocolate chips. Make them crazy and have some fun!
  • I made 150 of these last year for an adult party and all of them were eaten. There were only 50 people there. After they dry, cut them and wrap in parchment, twisting the ends closed. I use Handy Wax which is the perfect size for them. You can add ribbons to the ends but they look so cute wrapped in the handy wax. I piled them up into a huge basket and everyone grabbed a few.

Tips for Making Crispy Asian Rice Squares:

  • Use high-quality jasmine rice: This type of rice is known for its fragrant aroma and sticky texture, which makes it ideal for making crispy rice squares.
  • Soak the rice before cooking: Soaking the rice for at least 30 minutes will help it to cook more evenly and reduce the cooking time.
  • Use a non-stick skillet: This will help to prevent the rice from sticking to the pan and burning.
  • Cook the rice over medium heat: Cooking the rice over too high heat will cause it to burn on the outside and remain uncooked on the inside.
  • Press the rice firmly into the skillet: This will help to create a crispy crust on the bottom of the rice squares.
  • Let the rice squares cool completely before slicing: This will help them to hold their shape better.

Conclusion:

Crispy Asian rice squares are a delicious and versatile dish that can be served as an appetizer, main course, or side dish. They are easy to make and can be customized with a variety of sauces and toppings. Whether you are a fan of Asian cuisine or simply looking for a new and exciting way to enjoy rice, crispy Asian rice squares are sure to please.
