- For the lemon butter: Whisk together the lemon juice, salt, pepper, lemon zest and butter in a deep medium bowl until well blended (mixture will be like a thick sauce). Set aside until ready to use.
- For the halibut and crispy shallots: Combine the olive oil, lemon juice, garlic, salt, pepper and garlic in an 8-by-8-by-2-inch glass dish. Whisk the marinade to blend. Add the halibut and turn several times to coat evenly. Let stand 15 to 20 minutes.
- Combine the grapeseed oil and shallots in a medium heavy saucepan over medium-high heat. Cook, stirring often, until the oil heats up and the shallots turn golden brown, 5 to 7 minutes. Transfer the shallots with a slotted spoon to several layers of paper towels to drain and crisp. Sprinkle with salt and pepper just before using.
- Heat a large dry nonstick skillet over medium-high heat. Lift the halibut from the marinade, letting the excess drain off. Add the halibut to the hot skillet and sear 3 minutes. Turn the fish over using a flexible metal spatula. Sear until still slightly pink in the center, about 3 minutes longer, depending on thickness. Transfer the halibut to plates. HALIBUT WITH LEMON, CAPERS, AND CROUTONS

- In a medium saute pan over medium-high heat, melt 4 tablespoons of the butter. When the foam subsides, fry the cubes of bread until golden and crusty, about 4 to 7 minutes. Remove the croutons from the pan with a slotted spatula and set aside on paper towels to drain. Wipe out the pan.
- Place the flour on a plate and season well with salt and pepper. Dredge the halibut in the flour and shake off excess.
- Return the saute pan to the heat and melt 4 more tablespoons of butter. When the foam has subsided add the fish to the pan. - Heat oven to 400 degrees. Put a large skillet, preferably nonstick, over medium-high heat, and leave it there until hot. Add oil and butter together. Butter should sizzle. When butter foam subsides, add fish, and season it lightly with salt and pepper. Brown fish, basting with pan juices, then turn, and brown again. Do not worry about cooking through. Turn off heat, put fish on an ovenproof plate, and place it in oven.
- Turn heat under skillet to medium, and add anchovies and garlic. Cook, stirring occasionally, until anchovies break up, just a couple of minutes. Add capers and wine, and turn heat to high. Cook until wine is reduced by half. Return fish and its juices to pan, and turn it in sauce once or twice. Fish should be cooked through by now. (A thin-bladed knife inserted into its thickest part will meet little resistance.)
- Taste sauce, add some lemon juice, then taste again. It should be strong-tasting but only mildly acidic. Remove fish to serving plate, spoon sauce on top, and garnish with parsley.

Inspired by the simplicity and purity of Japanese sashimi, American chefs are exploring the world of seafood crudo (Italian for raw). Typically, crudo is accompanied by Mediterranean garnishes like capers and olive oil rather than the soy-based dipping sauce that is served with sashimi. At the 2005 Workshop, Florida chef James Reaux made a beautiful halibut crudo with chive oil, using the abundant chives in the winery garden. For raw preparations such as this one, the seafood must be impeccably fresh.

- For the chive oil: Put the chives and olive oil in a blender and puree until smooth. Transfer to a small bowl.
- With a sharp knife, cut the halibut fillet into broad, paper-thin slices, as if slicing smoked salmon. As you work, arrange the slices, slightly overlapping, on 8 chilled salad plates. You should be able to make about 32 slices, or 4 per portion. Drizzle the fish with Meyer lemon juice, using about 1 teaspoon per portion, then sprinkle with fleur de sel. Put a clump of shaved radish on the center of each portion, then drizzle chive oil around (not over) the fish, using about 2 teaspoons per portion.
- In a small saucepan, heat about 1 inch of vegetable oil to 360°F. To test whether the oil is hot enough, add a couple of capers; they should sizzle on contact. Add all the capers and cook, stirring with a wire-mesh skimmer, until they stop sizzling fiercely, about 20 seconds. Transfer to paper towels with the skimmer. The buds should have opened slightly, and they should be crisp. Scatter over the fish and serve immediately.

- Preheat oven to 400 F Make a dredging station for the fish; combine flour, chili powder and salt in a powder and salt in a shallow bowl. Beat egg with milk and dijon in another bowl and place panko in the third bowl. Dredge fish first in flour, then in egg mixture and then in panko to coat. Heat 2 tbsp canola oil in a large frying pan on med. high heat. Add fish and fry, turning for 2 to 3 minutes or until crumbs are golden. Transfer fish to a baking sheet and bake for 7 minutes or until fish is cooked through. Wipe out pan, add remaining 1 tbsp canola oil and heat on high heat. Add capers and fry for 2 to 3 min. or until crispy. Transfer to a paper towel lined late to drain. Add olive oil to pan over medium heat. Add zucchini and fry for 1 minute or until just beginning to soften. add tomatoes and garlic fry 1 minute longer or until they have begun to release, juice. Season with salt and pepper and sprinkle with parsley and fried capers. Serve fish over zucchini mixture, spooning some sauce over fish.
