Here's what you need: salt, black pepper, onion powder, garlic powder, paprika, ground cumin, dried oregano, cayenne powder, all-purpose flour, bone-in, skin-on chicken drumsticks, bone-in, skin-on chicken thighs, buttermilk, peanut or vegetable oil, honey

Provided by Alvin Zhou

Categories     Dinner

Yield 8 servings

Number Of Ingredients 14

2 tablespoons salt
3 tablespoons black pepper
2 tablespoons onion powder
2 tablespoons garlic powder
3 tablespoons paprika
2 tablespoons ground cumin
2 tablespoons dried oregano
2 teaspoons cayenne powder
3 cups all-purpose flour
4 bone-in, skin-on chicken drumsticks
4 bone-in, skin-on chicken thighs
3 cups buttermilk
peanut or vegetable oil, for frying
honey, for serving

Steps:

  • In a medium bowl, add the salt, pepper, onion powder, garlic powder, paprika, cumin, oregano, and cayenne and mix until combined. In a another medium bowl, combine half of the spice mix with the flour, mixing until the spices are evenly distributed.
  • Add the chicken to a large bowl and sprinkle with the remaining spice blend. Mix until all the chicken pieces are evenly coated.
  • Pour the buttermilk over the chicken and stir until the residual spices from the chicken have blended in with the buttermilk to create a light orange color. Marinate the chicken in the fridge for 2 hours, or overnight.
  • Heat the oil to about 325°F (160°C) in a large cast-iron skillet.
  • Dredge each piece of chicken in the flour, shaking off any excess. Dip them back into the buttermilk mixture, then back into the flour. Make sure to shake off excess flour or it'll burn while frying.
  • Fry 3-4 chicken pieces at a time, occasionally turning them over. Cook for 10-12 minutes, until golden brown, crispy, and the internal temperature reaches 165°F (75°C). Rest the cooked chicken pieces on a wire rack to let excess oil drain off.
  • Drizzle the chicken with honey, then serve.
  • Enjoy!

Provided by Nancy Fuller

Categories     main-dish

Time 1h45m

Yield 8 to 10 servings

Number Of Ingredients 10

Two 4-pound chickens, each cut into 10 pieces (2 legs, 2 thighs, 4 breast halves and 2 wings)
4 cups buttermilk
1 3/4 tablespoons kosher salt
1 1/2 tablespoons ground black pepper
1 tablespoon plus 1 teaspoon paprika
8 cups vegetable or canola oil
4 cups all-purpose flour
2 tablespoons garlic powder
2 tablespoons onion powder
1 cup honey

Steps:

  • Place the chicken pieces in a large bowl, then add the buttermilk, 1 tablespoon of the salt, 1 tablespoon of the pepper and 1 teaspoon of the paprika. Mix to combine. Cover and marinate in the refrigerator for at least 1 hour and up to 4 hours.
  • In a large, deep pot or Dutch oven pour enough of the oil to fill the pot 3- to 4-inches. Heat over medium-high heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Set a cooling rack over a baking sheet.
  • In a large bowl, whisk to combine the flour, garlic powder, onion powder, the remaining 3/4 tablespoon salt, 1/2 tablespoon pepper and 1 tablespoon paprika. Whisk to combine the dredge.
  • Lift the chicken from the buttermilk, then coat the pieces completely in the flour. Transfer the chicken to a baking sheet or large plate.
  • Working in batches and being careful to not overcrowd the pot, add the legs and thighs to the hot oil and cook, turning and monitoring the oil temperature, until crisp and golden brown, 5 to 6 minutes per side. Transfer the chicken to the prepared rack. Add the wings and breast pieces to the oil and cook until deep golden brown, 3 to 5 minutes per side. Transfer to the rack, then drizzle with honey and serve.

CRISPY FRIED CHICKEN

Crispy Fried Chicken image

I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

Yield 8

Number Of Ingredients 6

1 (4 pound) chicken, cut into pieces
1 cup buttermilk
2 cups all-purpose flour for coating
1 teaspoon paprika
salt and pepper to taste
2 quarts vegetable oil for frying

Steps:

  • Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
  • Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
  • Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
  • Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

SKILLET HOT HONEY CHICKEN WITH HEARTY GREENS

Skillet Hot Honey Chicken With Hearty Greens image

Requiring just one pan, this recipe yields supremely crisp, juicy chicken thighs and hot honey schmaltz, which serves as a warm vinaigrette for sturdy greens and a sauce for your - let's say it again - supremely crisp, juicy chicken thighs. Squint and the flavors are reminiscent of fried chicken with a side of braised collards: Crackly chicken cozied up next to spicy, tangy and a little-sweet greens fortified by animal fat. Make your honey-schmaltz as spicy as you wish: Green chiles will pack more heat than red.

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 pounds bone-in, skin-on chicken thighs (4 to 6 thighs)
Kosher salt and pepper
1 tablespoon extra-virgin olive oil
1 small hot chile, thinly sliced (such as jalapeño, Fresno or serrano), or to taste
1 large bunch or head of hearty greens, such as escarole, mustard greens or kale (about 6 ounces)
2 tablespoons honey
1 tablespoon apple cider vinegar

Steps:

  • Pat the chicken thighs dry with a paper towel, then season both sides with salt and pepper. Drizzle the olive oil into a large skillet, then add the chicken thighs skin side down.
  • Set over medium heat and cook, without moving them, until the skin is crisp and deep golden brown, about 15 minutes. If you can't stand leaving the chicken untouched for this long, use your tongs to press the chicken down into the pan, which promotes even browning.
  • Flip the thighs over and swirl the chile into the rendered chicken fat. Cook until the meat is cooked through, about 10 minutes.
  • Meanwhile, stem and tear the hearty greens into big bite-size pieces. In a big bowl, toss them with salt and pepper.
  • Transfer the chicken to serving plates, leaving the fat in the pan. Off the heat, stir the honey and vinegar into the fat until the honey's melted and everything's combined. Dress the greens with enough of the sauce to lightly coat, seasoning with salt and pepper as needed. (Feel free to eat the chile peppers or leave them behind.) Serve the chicken with the salad, spooning more sauce over the chicken and salad as desired.

Time 50m

Yield 8-10 pieces of chicken

Number Of Ingredients 12

3 lbs chicken parts
2 quarts water
1/2 cup sugar
1/2 cup kosher salt
1 cup cornstarch, sifted
3/4 cup water
2 teaspoons black pepper
1 teaspoon kosher salt
1/2 cup cornstarch
3/4 cup honey
2 tablespoons hot sauce
vegetable oil

Steps:

  • Make brine and batter at the same time so that they can be refrigerated for an adequate amount of time. The batter will be thin, but is quite adequate. It will thicken when chilled. Brine chicken in 2 quarts of water with 1/2 cup of sugar and 1/2 cup of salt whisked inches Refrigerate for 30 to 60 minutes. Heat oil (about 4 cups) to 350 degrees Farenheit in a 4 quart pot. Dry chicken and dredge in 1/2 Celsius cornstarch, shaking off any excess. Coat with batter and carefully drop into the oil, cooking for 5 to 7 minutes. Chicken will be light in color, but remove to a cooling rack or paper bags/towels. When all chicken is par-fried, reheat oil to 350 degrees. Dip fried chicken pieces into batter again and fry for another 5 to 7 minutes, then drain again. In a medium bowl, microwave honey and hot sauce for one minute. Place chicken pieces, one at a time, into warm mix and roll around until completely coated. Remove to a cooling rack. Enjoy hot or cold. Even when chilled, the chicken will remain super crispy.

CRISPY SKILLET-FRIED CHICKEN WITH A SPICY HONEY DRIZZLE

Crispy Skillet-fried Chicken with a Spicy Honey Drizzle image

Number Of Ingredients 13

4 chicken breasts
1 teaspoon black pepper
3 cups buttermilk
2 cups peanut oil
1 3/4 cups flour
1/2 cup rice flour
1 teaspoon white pepper
1 plus 1/4 teaspoon cayenne
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon celery salt
1/4 cup honey
1 tablespoon rosemary

Steps:

  • First, marinate the chicken: Place the chicken pieces on a baking sheet. Season on both sides with salt and black pepper. Pour the buttermilk into a large mixing bowl. Add the chicken, cover the bowl, and marinate in the refrigerator for 2 to 3 hours, turning occasionally.
  • Before frying, pour enough peanut oil to reach a depth of 1-inch in a heavy large skillet, preferably cast-iron. Heat the oil to 350 to 365 degrees on a deep-frying thermometer.
  • In a large sealable plastic bag, combine the flour, rice flour, white pepper, cayenne, paprika, garlic powder and celery salt. Close the bag and shake to blend. Remove 2 pieces of chicken from the buttermilk, place them in the bag, close the bag, and shake to coat them evenly. Transfer to a baking sheet. Repeat with the remaining pieces.
  • Carefully add the chicken, skin side down, to the hot oil in the skillet. Fry until deep brown and cooked through, 5 to 8 minutes per side depending on size, adjusting the heat to maintain the frying temperature; add the rosemary sprig to the oil, if you like. (A chicken piece will be cooked through if, after removing it from the oil, it registers 165 degrees on an instant-read thermometer inserted into the thickest part of the meat not touching bone.) Using tongs, transfer the cooked chicken to a rack.
  • Arrange the cooked chicken pieces on a napkin-lined platter. Place the lemon wedges around the chicken. In a small saucepan over low heat, warm the honey. Stir in the extra cayenne to taste. Drizzle the honey over the chicken. Serve immediately.

Tips:

  • Choose the right chicken pieces: For crispy fried chicken, bone-in, skin-on chicken thighs or breasts work best. The bone helps keep the meat moist and flavorful, while the skin crisps up beautifully.
  • Season the chicken thoroughly: Season the chicken with a flavorful blend of spices and herbs before frying. This will help develop a delicious crust and infuse the chicken with flavor.
  • Use a well-seasoned skillet: A well-seasoned skillet will help prevent the chicken from sticking and will promote even cooking.
  • Don't overcrowd the skillet: When frying the chicken, don't overcrowd the skillet. This will cause the chicken to steam instead of fry, resulting in soggy chicken.
  • Cook the chicken over medium heat: Cook the chicken over medium heat so that it has time to cook through without burning.
  • Flip the chicken only once: Once the chicken is placed in the skillet, don't flip it more than once. This will help prevent the chicken from breaking and will also help it cook evenly.
  • Let the chicken rest before serving: After frying, let the chicken rest for a few minutes before serving. This will help the juices redistribute throughout the chicken, resulting in more tender and flavorful meat.

Conclusion:

Crispy skillet-fried chicken is a delicious and easy-to-make dish that is perfect for any occasion. By following these tips, you can make sure your skillet-fried chicken turns out perfectly crispy and flavorful every time.
