I worked with a woman that baked 80 dozen or more cookies during the holidays. Every day she brought 1/2 dozen of every cookie she'd baked the night before; this is my favorite. I sometimes roll the dough into balls and then roll them in some granulated sugar rather than making these as drop cookies. These freeze well.

5 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cream of tartar
¼ teaspoon salt
1 cup butter
2 cups white sugar
2 eggs
1 cup vegetable oil
1 teaspoon vanilla extract
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets. Stir together the flour, baking soda, cream of tartar, and salt; set aside.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in eggs, vegetable oil, and vanilla. Gradually stir in flour mixture until smooth. Stir in nuts. Drop dough by rounded teaspoonfuls onto the prepared cookie sheets. Flatten cookies with a fork.

1 cup sugar
2 eggs
1/2 teaspoon lemon extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for at least 2 hours or until easy to handle., On a floured surface, roll dough to 1/8-in. thickness. Cut with 2-1/2-in. cookie cutters. Place on greased baking sheets. I found this recipe in Yankee magazine in an article they used to feature called "Recipe with a History." This is my adaptation. Prep time includes chilling time, as well as time to roll out and cut the dough. Bake time is 12-15 per baking sheet.

1 1/2 cups granulated sugar
1 cup sweet unsalted butter
2 large eggs, beaten
1/2 cup heavy cream
1 teaspoon vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons baking powder

  • Cream together the butter and the sugar.

I modified this recipe and have come up with a cookie recipe that I have made once a week now for 6 months. If the cookie jar gets empty, it is a tragedy around our home. This is a very crispy cookie and reminds me of the granola bar. It's really great, give it a try. Don't deviate from the ingredients, however you may add raisins if desired.

1 cup Butter Flavor Crisco
1 cup Splenda sugar substitute
1/2 cup Splenda brown sugar blend
1 teaspoon vanilla
1 teaspoon salt
2 eggs
1 1/2 cups all-purpose flour
3 cups rolled oats (not instant)
1 teaspoon baking soda
1/2-1 cup chopped pecans (I use a cup)

Steps:

  • Thoroughly cream shortening and sugars: add eggs, vanilla and beat well. (until fluffy). Add flour, salt and soda to creamed mixture: add nuts and oats and mix well. Form dough in log rolls, 1 to 1 1/2 inches in diameter. Wrap logs in waxed paper, aluminum foil, or clear wrap, put in freezer until almost frozen.
  • With knife slice cookies about 1/4 inch thick. Bake on un-greased cookie sheet at 300°F until golden brown. (The slow baking makes a crispy cookie). Enjoy.

She would sell only one bag per person until she ran out, which took about 30 minutes. Before I moved away, I asked her for the recipe. She gave it to me on the condition that I couldn't share it with anyone for 25 years. 3/4 teaspoon kosher salt
3/4 teaspoon baking soda
2 cups all-purpose flour
1 tablespoon pure vanilla extract
1 1/2 cups rice krispies cereal
3/4 cup sugar
1 cup unsalted butter, at room temperature

Steps:

  • Preheat the oven to 300°. In a large bowl, using an electric mixer, beat the butter with the sugar and salt until smooth and fluffy. Mix the baking soda with the vanilla, then add to the butter mixture. Add the flour, 1 cup at a time, mixing well between additions. Gently stir in the Rice Krispies.
  • Lightly butter 2 baking sheets. Spoon 2-tablespoon-size mounds of cookie dough onto the prepared baking sheets, spacing them about 3 inches apart. 3/4 c shortening
2 c sugar
2 eggs
1/4 milk
1 tsp vanilla extract
4 c flour
3 tsp baking powder

Steps:

  • 1. Beat the shortening and sugar together until very light and fluffy. Beat the eggs in one at a time, then add the milk and vanilla.
  • 2. Sift together the flour and baking powder. Turn your mixer on low and add the flour mixture a cup at a time to the shortening/sugar mixture, mixing only until just incorporated. Dough will be very stiff. Chill the dough several hours, or even overnight.
  • 3. There are two ways to finish these cookies. You can roll out portions of the dough (keep remaining dough chilled), use cookie cutters to cut out desired shapes, place on parchment lined baking sheets and bake at 325 until they just start to brown at the edges. Cool slightly, then remove to a rack to finish cooling. You can also just make balls out of the dough, then flatten them with a glass dipped in sugar. You will need to flatten them a LOT, they need to be pretty thin, maybe 1/4 inch. Sprinkle the cookies with regular or colored sugar before baking, if desired.
