Time 8h10m

Yield 6 serving(s)

Number Of Ingredients 13

1 1/2 lbs boneless skinless chicken breasts
1 (14 ounce) can tomatoes, drained and diced
1 (14 ounce) can artichoke hearts, drained
1 small onion, chopped
1/2 cup kalamata olive, chopped
1 cup chicken broth
1/4 cup dry white wine
3 tablespoons quick-cooking tapioca
1 tablespoon fresh Italian parsley, chopped
1 teaspoon dried sweet basil leaves
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Combine all the ingredients in the slow cooker. Mix thoroughly. Add artichokes 30 minutes before you serve.
  • Cover; cook on Low for 6 to 8 hours or on High 3 1/2 to 4 hours.

Tips:

  • Use a slow cooker liner: This will make cleanup a breeze. Just lift the liner out of the slow cooker and discard it.
  • Trim the artichokes: Cut off the stem and the thorny leaves. You can also use canned or frozen artichoke hearts.
  • Use boneless, skinless chicken breasts: This will cook quickly and evenly in the slow cooker.
  • Add some vegetables: Such as carrots, celery, and onion. This will add flavor and nutrition to the dish.
  • Season the chicken: With salt, pepper, and garlic powder. You can also add other spices, such as paprika or cumin.
  • Add some liquid: Such as chicken broth or water. This will help to prevent the chicken from drying out.
  • Cook on low for 6-8 hours or on high for 3-4 hours: The chicken is done when it is cooked through and the internal temperature reaches 165 degrees Fahrenheit.
  • Serve over rice or pasta: Or with a side of vegetables.

Conclusion:

Crock-Pot Artichoke Chicken is an easy and delicious meal that is perfect for a busy weeknight. It is also a great way to use up leftover chicken. With a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will enjoy.
