SLOW COOKER BLACK-EYED PEAS
Our family was visiting, and we went to Disney World on New Year's Day. I just had to have black-eyed peas before midnight. Make it easy, soak black-eyed peas in the slow cooker overnight. This is a little thinner, like a very rich soup. We really enjoyed it; hope you will too! Hot buttered cornbread and chunky applesauce are my favorites to serve with black-eyed peas.

SLOW-COOKER HAM AND BLACK-EYED PEA SOUP
This recipe is proof that soup is a perfect food to slow cook. The low and slow cooking softens up the ham hock and infuses the black-eyed peas with loads of flavor, without turning them to mush. And after it's finished its flavoring duties, that ham hock still has more to give your soup. The meat that's clinging to the hock gets chopped into bits and added back in for a toothsome texture and heartiness that'll satisfy the whole family. So next time you need a set-it-and-forget-it family dinner, you know what to do.

CROCK POT BLACK-EYED PEAS & HAM
Not only are these black-eyed peas good, but they're also very easy to make. Cooking the beans with the hambone is key to this recipe. It infuses flavor in the beans. Savory from the ham, these black-eyed peas have a little kick from the Rotel. The whole dish is flavorful. Serve with a slice of cornbread, for a delicious meal to ring in the new year. A great way to use your holiday hambone too.

Steps:
- Rinse peas. Drain and place in Crock Pot.
- Pour in chicken broth. Add water to bring the liquid just to the top of the peas.
- Bury the ham bone down into the peas. (If you don't have a bone I use chunks of ham and it works just as well.)
- Add the chopped onion, bay leaves, can of Rotel tomatoes, and garlic powder.
- Cover and set Crock Pot to low for 8 hrs.
- At that time, remove bone. Remove any meat from the bone. Cut into bite-sized pieces (you want about two cups total).
- Add ham to the Crock Pot. Recover and continue to cook for 2 more hours.
- Remove bay leaves. Serve with cornbread and enjoy!
- Note: If you do not use a ham bone and have only chunks of ham then just cook on low for 10 hrs and increase the amount of ham to about 3 cups. I use a 6 qt Crock Pot and it is full when all ingredients are added. If you are having trouble with room in the pot you can adjust the liquid to less.
Tips:
- Use dried black-eyed peas for the best flavor and texture. If you use canned black-eyed peas, be sure to rinse and drain them well before using.
- Soak the black-eyed peas overnight before cooking. This will help to reduce the cooking time and make the peas more tender.
- Use a ham hock or ham bone for extra flavor. If you don't have a ham hock or ham bone, you can add some smoked sausage or bacon to the pot.
- Add some vegetables to the pot for a more nutritious meal. Good options include onions, celery, carrots, and potatoes.
- Season the black-eyed peas with your favorite spices. Some good options include salt, pepper, garlic powder, onion powder, and paprika.
- Serve the black-eyed peas with cornbread, rice, or mashed potatoes.
Conclusion:
Black-eyed peas are a delicious and versatile legume that can be used in a variety of dishes. This crock pot recipe is a great way to make black-eyed peas that are flavorful and tender. The ham hock or ham bone adds a delicious smoky flavor to the peas, and the vegetables and spices make the dish even more flavorful. This recipe is also very easy to make, so it's perfect for a busy weeknight meal.
