CROCK POT CREAM CHEESE & SAUSAGE DIP
This dip is an absolute hit everytime I make it! My husband and all of our friends devour it and it's always the first to go! It has a nickname of "white trash dip". I make it in a round 4 quart crock pot, but the recipe can be halved or doubled for smaller or larger crock pots.

Steps:
- Brown both packages of sausage in a skillet over medium heat.
- Drain the sausage in a colander.
- Cube the cream cheese into a crock pot.
- Add the sausage to the cream cheese in the crock pot.
- Add both cans of rotel (with the juice) to the crock pot.
- Heat the mixture in the crock pot on high heat for approximately 1 hour, stirring occasionally until the dip is well mixed.
- Reduce heat to warm/low and serve with tortilla chips.

- Brown the sausage on the stove, and drain on paper towels. Unwrap the cream cheese, and put it into your crockpot. Chop up the sausage and add on top. Drain the Rotel, and add it. Cover and cook on low for about 90 minutes, or on high for 45. Stir well and eat with tortilla chips.

This is a dip from a friend of mine--very tasty, different, and it is better if served warm. I use a crock pot to take it on the go.

Steps:
- Fry sausage in skillet let it crumble, make sure they are all small pieces. Drain grease.
- Cut cream cheese in small chunks place in frying pan and let melt while stirring occasionally.
- Do not have your stove too high let it cook slowly.
- Add can of tomatoes, let all ingredients blend together while stirring occasionally.
- Use milk if it seems to thick.
- Serve with cracker or chips for dipping. We like the small bite size tortilla chips.

- In a skillet over medium heat, cook ground sausage and ground beef until no longer pink.
- Drain off excess fat and transfer mixture to crock pot.
- Cut Velveeta and cream cheese into chunks and place into crock pot on top of meat.
- Pour in diced tomatoes (with juices) and taco seasoning.
- Turn crock pot to low and cook for 1 hour.
- Stir well to incorporate all cheeses and seasonings.
- Cook for 30 more mintures or until cheese is melted and hot.
- Serve with your favorite tortilla or corn chips.
