CROCK POT HULA CHICKEN

A tender pineapple chicken dish that is guaranteed to be gobbled up by kids and adults alike. You can also add peppers, they just aren't a big hit in our house. Toss everything in the crock pot (even frozen chicken breasts!) and come home to a complete meal that just needs to be served over rice. This was an entry in RSC #13. Enjoy!

Time 4h5m

Yield 6 serving(s)

Number Of Ingredients 9

1/2 cup honey
1/2 cup soy sauce
1/4 cup brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon dried ginger
2 teaspoons chicken bouillon
6 boneless skinless chicken breasts (can use frozen, see below)
1 (19 ounce) can pineapple chunks, reserve juice
2 cups baby carrots, cut in half

Steps:

  • Pour honey, soy sauce, brown sugar, garlic powder, ginger, bouillon and pineapple juice in the crock pot and stir.
  • Lay chicken on bottom of pot and cover with carrots and pineapple chunks.
  • Cook in your crock pot for 4-6 hours on low or 3-4 on high. If you are using frozen chicken breast, just add another hour on low or 1/2 hour on high.
  • I actually like the thinner sauce for this one. A reviewer suggested thickening the sauce, so I will include CarrolJ's recommendation - after the meat, carrots and pineapple are removed, add 1/2 cup of water mixed with 4 Tablespoons of cornstarch. Then cook the sauce until thickened and smooth.

Tips:

  • Choose an appropriately sized dish for cooking the chicken. This recipe is for six servings but a larger or smaller crock pot can be used if needed.
  • Cooking time will vary depending on the size of the chicken pieces. Larger pieces may take longer to cook. For best results use a kitchen thermometer to confirm the chicken has reached a safe temperature for consumption (165 degrees Fahrenheit internal temperature) before removing from the crock pot.
  • Serve immediately over rice, noodles, or vegetables. This recipe is a versatile one that can be enjoyed in a variety of ways.
  • Feel free to experiment with different ingredients to create your own unique version of this dish. For example, pineapple chunks, green peppers, or even mango can be added for a tropical twist.
  • Garnish with sliced green onions, cilantro, or sesame seeds for a pop of color and extra flavor.

Conclusion:

This Crock Pot Hula Chicken recipe is an easy, flavorful, and versatile dish that is sure to be a hit with your family and friends. It is perfect for a busy weeknight meal or a casual get-together. With just a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that everyone will love. So, grab your crock pot and get cooking!
