CROCK-POT MEXICAN ORANGE CHICKEN (POLLO CON NARANJA)

Crock-Pot Mexican Orange Chicken (Pollo Con Naranja) image

My husband had open-heart surgery when we were living on the Texas-Mexican border in 2001. The wife of his heart-surgeon, Velda de La Garza, wrote a heart-healthy Mexican cookbook (*Healthy Mexican Cooking*), which we purchased while he was in the hospital. This dish is one of our favorites -- an easy Mexican take on that old favorite, Orange Chicken. We found it needed a little more spice than called for; you could either up the cayenne or leave the jalapeno seeds in. But then we like spicy food!

Time 6h15m

Yield 4-5 serving(s)

1/2 cup onion, cut in strips

  • Set crock pot to high.

CRANBERRY ORANGE CHICKEN - CROCK POT

Cranberry Orange Chicken - Crock Pot image

OUT OF THIS WORLD! Tender and delicious! Flavor Galore! This is one of my favorite dishes. I have found that bone-in chicken gives more flavor. I use the following method for fall-off-the-bone chicken. After placing the lid on crock pot place a large double folded kitchen towel over top of lid letting it fall over sides of crock pot. This allows no steam to escape. The sauce in this dish makes good 'gravy' over cooked rice. Makes a pretty dish to serve guests.

Categories     Chicken Breast

Time 6h15m

Yield 2-3 serving(s)

Number Of Ingredients 15

3 chicken breasts (bone-in)
1 1/2 teaspoons salt
1 onion, chopped
1 celery rib, chopped
1 (15 ounce) whole berry cranberry sauce
3 ounces orange juice
1 teaspoon dry mustard
1/2 teaspoon cinnamon
2 teaspoons lemon juice
2 tablespoons honey
2 tablespoons brown sugar
3 tablespoons chili sauce or 3 tablespoons barbecue sauce
1 orange, sliced
1 tablespoon cornstarch
3 tablespoons cold water

Steps:

  • Rub salt onto chicken breasts and place in bottom of crock pot.
  • In a medium bowl place onion, celery, cranberry sauce, orange juice, dry mustard, cinnamon, lemon juice, honey, brown sugar and chili sauce. Stir and pour over chicken breasts.
  • Place lid on crock pot and top with kitchen towel using instructions in description above. (My crock pot is only 3 months old and I still do this.) Turn crock pot on high and allow to cook 1 hour. Turn on low for 3 or 4 hours. NOTE: I have tried leaving crock pot on high the entire time and this dish was done in 3 1/2 hours.
  • Lift lid and quickly place orange slices over chicken without stirring. Cook an additional hour.
  • Combine cornstarch and cold water. Add last 10 minutes of cooking time for thickening purposes.
  • Serve over cooked rice and enjoy!

CROCK POT ORANGE-CURRY CHICKEN WITH SWEET POTATO PILAF

Crock Pot Orange-Curry Chicken With Sweet Potato Pilaf image

This dish came from a long stare into the pantry trying to put together a meal when I didn't have enough sweet potatoes for all 6 of us and couldn't get to the store. But I had a bunch of little oranges the kids weren't eating. Sometimes necessity is delicious. ;) It's not as involved as the long ingredient list looks and I'm sure it would be easy to halve if you're not feeding a big family with hungry teens.

Provided by Laura Mattingly

Categories     Chicken

Time 6h20m

Number Of Ingredients 8

3-4 boneless skinless chicken breasts, cut up
1/3 c flour
1/2 Tbsp salt
3 Tbsp ketchup
4 Tbsp brown sugar
olive oil
1 tsp balsamic vinegar
6 oz frozen orange juice concentrate, thaw or throw in microwave for 45 seconds

  • 2. Pour the flour in smaller bowl. Cover the chicken in flour and shake off excess. Pour small amount of oil in skillet and brown the chicken. The chicken doesn't need to be fully cooked. After chicken is done cooking pour into crock pot.
  • 3. Cover the chicken with the sauce and give a good stir. Cook on low for 5-6 hours or High for 2-3 hours. Serve over Rice.

Tips:

  • Mise en place: Before you start cooking, make sure all your ingredients are prepped and ready to go. This will help you avoid scrambling and ensure that your orange chicken turns out perfectly.
  • Use a good quality orange marmalade: The quality of the orange marmalade you use will make a big difference in the flavor of your orange chicken. Look for a marmalade that is made with real oranges and has a nice balance of sweet and sour flavors.
  • Don't overcook the chicken: Chicken breasts can easily become dry and tough if they are overcooked. To prevent this, cook the chicken on low heat for 4-6 hours, or until it reaches an internal temperature of 165°F.
  • Serve over rice: Orange chicken is traditionally served over rice. This helps to soak up the delicious sauce and makes for a complete and satisfying meal.
