Crock Pot Pepper Steak & Onions image

My version of Pepper Steak, compiled from several different recipes on the web and adjusted to taste and what I had in the fridge! This is a "runnier" version as opposed to a thicker sauce, it's great for dunking! Nice winter comfort food on a cold day.

Time 8h20m

Yield 6 serving(s)

Number Of Ingredients 13

2 lbs beef sirloin, cut into 2 inch strips
garlic powder (to taste)
3 tablespoons vegetable oil
1 beef bouillon cube
1/4 cup hot water
1 tablespoon cornstarch
1/2 teaspoon red pepper flakes
1/2 cup onion, chopped
2 large green bell peppers, roughly chopped
1 (14 1/2 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt

Steps:

  • Sprinkle strips of sirloin with garlic powder to taste.
  • Heat vegetable oil in a large skillet over medium heat, brown beef strips.
  • Transfer beef to crock pot.
  • Crush and mix bouillon cube with hot water until dissolved, then stir in cornstarch until dissolved.
  • Pour into the crock pot with meat.
  • Add red pepper flakes, onion, green peppers, stewed tomatoes, soy sauce, sugar, and salt.
  • Cover, and cook on High for 3 to 4 hours, or on low for 6 to 8 hours.
  • ** If you would like to thicken the sauce for gravy, mix 1 TBS cornstarch with some water and stir into crock pot 1/2 hour before complete cooking time.

Tips:

  • Tenderize the Steak: For extra tender steak, use a meat mallet to pound the steak pieces before cooking. This helps break down the muscle fibers, resulting in a more tender and juicy steak.
  • Marinate the Steak: Marinating the steak in a flavorful mixture of soy sauce, garlic, and ginger enhances the beef's flavor and makes it more succulent.
  • Sear the Steak: Before adding the steak to the slow cooker, sear it quickly in a hot skillet. This creates a nice caramelized crust that locks in the juices and adds depth of flavor.
  • Brown the Peppers and Onions: Sautéing the peppers and onions before adding them to the slow cooker gives them a slightly caramelized flavor that complements the steak.
  • Use a Variety of Peppers: Feel free to mix and match different colored bell peppers for a more vibrant and flavorful dish.
  • Add Some Spice: If you like a little heat, add a pinch of cayenne pepper or a few slices of jalapeño to the slow cooker.
  • Serve with Rice or Noodles: Crock-Pot pepper steak pairs well with both rice and noodles. Choose your favorite grain and serve it alongside the tender steak and flavorful sauce.

Crock-Pot pepper steak is a classic comfort food that's easy to make and packed with flavor.
