6 potatoes, peeled and cut into large chunks
5 carrots, peeled and cut into 2-inch slices
1 onion, quartered
2 -3 lbs boneless chuck roast
1/2 cup water or 1/2 cup beef broth
1 tablespoon chives, chopped
2 tablespoons parsley, chopped
1/8 teaspoon pepper
1 (1 ounce) package onion soup mix
2 tablespoons Worcestershire sauce
1 (10 3/4 ounce) can cream of mushroom soup

Steps:

  • Put potatoes, carrots and onion on bottom of crockpot.
  • Place the roast on top, fat side up.
  • Pour in water or beef broth.
  • Sprinkle chives, parsley, pepper and Onion Soup mix over the meat.
  • Pour Worcestershire sauce and mushroom soup over meat.
  • Cover and cook on low 8-10 hours.
  • **Note: If your roast is frozen, start it on low the night before with just the water or broth. Add the rest of the ingredients the next morning and cook until dinnertime! If done this way, you can easily remove the fat layer in the morning before adding the other ingredients.

  • Cut vegetables and place in crock in the following order: carrots, celery, onion and potatoes. Sprinkle with salt.
  • Brown roast in vegetable oil and place on top of vegetables in crock pot. (More salt may be sprinkled on roast.).
  • In a small bowl mix cream of mushroom soup, ketchup, worcestershire sauce and water. Pour over roast.
  • Cover with crock pot lid and cook 1 hour on high and 4 hours on low. Serve over rice.

3 lbs boneless bottom round roast
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 cup dry red wine
2 cups beef broth
1 large onion, coarsely chopped
2 large carrots, coarsely chopped
kosher salt & freshly ground black pepper

Steps:

  • Place chopped onion and carrots in bottom of crock pot.
  • Season all sides of the roast liberally with the kosher salt and ground pepper.
  • Place roast on top of onions and carrots, fat side down.
  • Combine mustard, sugar, Worcestershire sauce, beef broth and red wine in a separate bowl and pour over roast
  • Set crock pot to low and cook for 3 hours.
  • After 3 hours, turn the roast onto one side and cook for 20 minutes.
  • After 20 minutes, turn the roast on the next side and cook 20 minutes, repeat until the roast has the fat side on the bottom again.
  • Cook for about 2 more hours usually 6 hours total.
  • The roast is done when it shreds easily with a fork.

4 lbs bottom round beef roast
1 (1 1/4 ounce) envelope onion soup mix
1 (19 ounce) can progresso French onion soup (not condensed soup)
1 (12 ounce) can beer
3 beef bouillon cubes
1/4-1/2 teaspoon fresh coarse ground black pepper
salt
10 kaiser rolls (or your favorite hard rolls)
provolone cheese (optional)

Steps:

  • Place roast in 4.5 - 6 quart slow cooker.
  • Sprinkle with onion soup mix and then pour onion soup and beer over it.
  • Drop bouillon cubes in different spots into the liquid and sprinkle pepper and salt to taste over all.
  • Cook on high for 4-5 hours. (I guess you could also cook on low for 8 hours or so, but I haven't tried it!).
  • Remove meat and slice or shred; return to slow cooker and cover.
  • Turn to low and let meat soak up the juices until ready to serve.
  • Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.

5 lbs sirloin tip roast
1 (1 ounce) package Italian salad dressing mix
2 -3 small onions, chopped
1 (10 1/2 ounce) can cream of mushroom soup
2 tablespoons flour, diluted in
2 tablespoons water

  • Put chopped onions on the bottom of the crock pot so the meat has something to rest on.
  • Put meat in the crock pot and rub the salad dressing powder all over it, turning to get all sides.
  • Open soup can and spread all over the roast with a butter knife.
  • Do NOT add any liquid to the crock pot!
  • Cook on high for two hours, then on low for another four, at least.
  • You don't want the roast to be falling apart, but you want it tender.

2 teaspoons chopped garlic (out of the jar is even ok)
1 ounce Lipton Onion Soup Mix (I use the whole package, I'm not sure of the precise measurement)
1/2 cup water (I'm guessing here, I really don't measure. Just cover the roast a little more than half way.)

Steps:

  • So easy -- just throw the barbecue sauce in a crock pot or in a dutch oven, along with the garlic and soup mix.
  • Place the roast in the crock pot or pan and add some water (you can brown the roast if you prefer but it's not needed if you're short on time).
  • Cook on low in the crock pot for about 8 hours or on high for 4-5 until it starts to fall apart.
  • I usually then take the roast out of the crock pot and pour the remaining liquid into a sauce pan, add a little water and throw some egg noodles into the pan and cook until they are cooked through.
