1 lb sausage (breakfast type)
4 potatoes, cut in cubes
1/2 cup onion, chopped
1 celery rib, chopped
1 large carrot, chopped
1 (14 ounce) can chicken broth
1 (12 ounce) can evaporated milk
2 cups cheddar cheese, shredded
salt and pepper

Steps:

  • Brown sausage and onion in a skillet. Drain well.
  • Place potatoes, celery and carrot in bottom of crock pot. Add sausage and onion mixture. Pour chicken broth over vegetables and sausage.
  • Turn crock pot to low and cook 4 to 5 hours.
  • During the last 5 minutes of cooking add evaporated milk and cheddar cheese. Do a taste test for salt and pepper and add, if needed.
  • Note: If a thicker soup is desired, add -- 1 tablespoon of cornstarch dissolved in 2 tablespoons of cold water.
  • Serve and enjoy!

5 potatoes
1 (10 1/2 ounce) can mushroom soup
2 (10 1/2 ounce) cans chicken broth
1 lb smoked sausage
1 medium onion
1 cup milk
1 cup shredded cheddar cheese
1 tablespoon cornstarch
2 -3 tablespoons butter
salt & pepper

Steps:

  • Pour chicken broth in crock pot.
  • Add can of mushroom soup and mix well with broth.
  • Peel and dice potatoes, add to crock pot.
  • Dice onion and saute in skillet with butter until soft.
  • Slice smoked sausage and then quarter.
  • Add to onion.
  • Cook until smoked sausage is hot.
  • Add to crock pot.
  • Cook on high for 4 hours.
  • Before serving, lower heat and add milk and cheese. Stir in cheese until melted.
  • Mix cornstarch with a small amount of water. Mix until smooth. Add to soup to help thicken.

I have seen various soup recipes using smoked sausage and potatoes. I combined ingredients from a few to come up with this one. You can add or subtract any ingredients according to your taste.

12 oz pkg hillshire farms beef lil smokies, halved
6-8 small red potatoes quartered,
2 Tbsp minced garlic
2 ribs celery, sliced
1 pkg dry onion soup mix
1 can(s) condensed cream of mushroom soup
1 medium red bell pepper, seeded and diced
1 can(s) 14.5 ounces; diced tomatoes, undrained
1 can(s) 15.25 ounces corn, drained
4 c chicken broth
1 tsp dried thyme
1 tsp salt
1 tsp freshly ground black pepper

Steps:

  • 1. Place cut sausage, potatoes and vegetables into crock pot.
  • 2. Combine chicken broth, dry onion soup mix, and cream of mushroom soup. Mix well to combine all ingredients.(What I did was stir together the mushroom and dry onion soup using just about 1/2 of the chicken broth to dissolve the dry soup base and thin out the mushroom soup and then added the remaining chicken broth) Pour over vegetables and sausage in crock pot.
  • 3. Cook on Low for 6-8 hours or High for 3-4 hours. **OPTIONAL: approx 5 minutes before serving you may stir in 1/2 cup sour cream.

Tips:

  • For a thicker soup, use less broth or add more potatoes.
  • For a spicier soup, add more cayenne pepper or red pepper flakes.
  • To make the soup ahead of time, cook it according to the directions and then let it cool completely. Store the soup in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
