You may alter the ground meat as you please; sometimes I use all ground beef when I find a good sale but half beef/half pork is pretty tasty. My crock pot is my best friend at times when I'm having busy days at work but still want a decent meal on the table for my family. I serve spaghetti with crusty bread and a romaine salad. Cook time is the crock pot cooking time. This recipe is for a 4 quart crock pot, halve it if your pot is smaller.

1 lb ground beef
1 lb ground pork
1 medium onion, chopped fine
2 (28 ounce) cans diced tomatoes, with juice
2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
2 bay leaves
5 garlic cloves, pressed
4 teaspoons dried oregano
1 1/2 teaspoons salt
4 teaspoons dried basil
3 tablespoons brown sugar
1 teaspoon dried thyme

  • Brown meats and onion in a skillet and drain well.
  • Transfer to your crock pot.
  • Add remaining ingredients and mix well.

2 tablespoons olive oil
1 onion, chopped
2 carrots, peeled and chopped
2 cups sliced mushrooms
1 green bell pepper, chopped
2 (14 ounce) cans diced tomatoes with seasonings, undrained
15 ounces tomato sauce
6 ounces tomato paste
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
12 ounces spaghetti
parmesan cheese (optional)

Steps:

  • Cook onions and carrots in oil in large nonstick skillet over medium heat.
  • Stir and cook for 4-5 minutes until tender. Add mushrooms and bell pepper and stir. Place vegetables into bottom of 4-5 quart crock pot and add remaining ingredients except spaghetti pasta and cheese.
  • Cover crock pot and cook on low for 7-8 hours.
  • Uncover, stir thoroughly, then leave cover off crock pot and turn heat to high.
  • Cook, uncovered, for 1 more hour to thicken sauce.
  • At this point the sauce can be frozen. Divide into smaller portions and cool in refrigerator.
  • Wrap, label, and freeze the sauce up to 3 months.
  • To thaw and reheat, thaw sauce overnight in refrigerator.
  • Pour into skillet and heat over medium heat, stirring frequently, about 15-20 minutes or until sauce bubbles and is thoroughly heated.
  • You can even cook the pasta until almost tender and combine it with the cooled sauce. Freeze as directed, and thaw as directed. You may need to add 1/4-1/3 cup water when reheating if freezing the pasta in the sauce.
  • Or you can go ahead and serve sauce with cooked spaghetti and grated Parmesan cheese. 6 servings.

26 ounces garlic tomato and basil pasta sauce (we prefer Glen Muir)
1 small onion
1/2 green bell pepper
1/2 yellow bell pepper
1/2 red bell pepper
1/4 cup KRAFT Shredded Parmesan Cheese
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon minced garlic clove, divided
1 teaspoon salt, divided
1/4 teaspoon ground black pepper, divided
2 tablespoons olive oil

Steps:

  • finely dice green, yellow and red bell peppers and onions real small.
  • heat oil in large deep pan at medium high heat until hot.
  • add the diced vegetables and half the minced garlic, half the salt and half the pepper.
  • cook the vegetable mixture stirring constantly (like stir-fry) until slightly softened.
  • add the ground chuck to the pan with the vegetable mixture and brown until no longer pink.
  • drain and put in the bottom of the slow cooker and turn on low.
  • in a small mixing bowl add sauce, shredded Parmesan cheese (shredded works better than grated for this recipe), basil, oregano, the rest of the minced garlic, salt and pepper and mix well.
  • pour sauce mixture over the meat mixture in the slow cooker and mix both the meat and sauce mixtures together well.
  • cook on low 4-6 hours.
  • use over the pasta of your choice but we prefer spaghetti or fettuccine use a heavy pasta.

Rosalie is my mother-in-law, Dolores my one of my (5) sisters-in-law. Mom makes a wonderful spaghetti sauce in her pressure cooker. Since few of the daughters (bio and in-laws) have a pressure cooker, Dolores adapted this for us. Hubby loves his mom's spaghetti sauce and was thrilled when I finally made it. To make it taste like mom's, I cooked it on low for 8 hours, then uncovered it and cooked it on high for 1 hour. I used my older crockpot so using one of the newer crockpots may mean just taking off the lid for the last hour.

1 lb ground beef
1 lb ground italian sausage
1 pkg of pepperoni cut in 1/4's
1 pkg of canadian bacon cut in 1/4's
1 pkg of italian salami cut in 1/4's (optional)
2 tsp garlic powder
2 tsp onion powder or to liking
2 can(s) small cans or one big can tomato paste
4 can(s) big cans of garlic & basil crushed tomatoes
1 small can of beef broth
1 tsp italian seasoning
mushrooms (optional)
sliced olives (optional)
1 to 2 pinch pizza peppers (optional)
1 Tbsp worcester shire sauce
spaghetti cooked to package directions

Steps:

  • 1. Put all ingredients in the Crock Pot and mix. Cook on low or med all day. If your afraid it will be to greasy you could fry the hamburger and Italian sausage.
  • 2. You could put olives, mushrooms, and pizza peppers in to add a little more to the sauce. Towards the end of cooking you could taste to see it the seasoning's need to be adjusted.
