SLOW COOKER FLANK STEAK FAJITAS

Slow Cooker Flank Steak Fajitas image

These Slow Cooker Flank Steak Fajitas are one of the easiest, most delicious meals I have ever made!

Yield 6

Number Of Ingredients 17

1 1/2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 pounds flank steak
2 Tablespoons low sodium soy sauce
1 jalapeno pepper (seeded and chopped)
2 teaspoons minced garlic
4 red bell peppers (chopped)
1 onion (diced)
6 tortillas
1 cup shredded cheddar cheese - optional topping
2 avocados (diced) - optional topping
1/2 cup sour cream - optional topping
2 limes (juiced) - optional topping
1/4 cup cilantro (chopped) - optional topping

Steps:

  • In a small bowl, combine the chili powder, cumin, coriander, salt and pepper.
  • Rub the spice mixture over all sides of the flank steak, place it in the bottom of the slow cooker, and add the soy sauce.
  • Top the flank steak with the jalapeno, garlic, bell peppers, and onion. There's no need to add any water or other liquid.
  • Cook on high for 5 to 6 hours or on low for 8-9 hours, or until the steak can easily be shredded with two forks.
  • Thoroughly drain the meat and peppers, shred the meat and serve on tortillas with toppings or the fixings of your choice.

Tips:

  • Choose the right cut of steak: Flank steak, skirt steak, or sirloin steak are all good choices for fajitas. These cuts are relatively thin and cook quickly, making them ideal for this dish.
  • Slice the steak against the grain: This will help to tenderize the meat and make it easier to chew.
  • Marinate the steak: Marinating the steak in a mixture of spices, herbs, and oil will help to flavor the meat and make it more tender.
  • Cook the steak over high heat: This will help to sear the meat and lock in the juices.
  • Don't overcook the steak: Fajitas are best when the steak is cooked to medium-rare or medium.
  • Serve the steak with your favorite toppings: Common toppings for fajitas include guacamole, salsa, sour cream, and cheese.

Conclusion:

Crock-Pot steak fajitas are a delicious and easy-to-make meal that is perfect for busy weeknights. With just a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will love.
